Granola is a staple in our house at all times. We love putting granola on yogurt, on top of smoothie bowls or eating it by the handfuls. Trust us…this granola is so good, you will be doing the same!

This granola is crisp and chunky. The delicious maple cinnamon and ginger smell literally takes over your home and we honestly can’t think of anything better than that. The smell and taste are truly incredible!

Reasons Why You Should Make Homemade Granola

1. It’s super simple to make

Granola is actually super simple to make. You simply combine all the ingredients in a large bowl, spread them on a baking sheet and bake it. It’s perfect to make on a Sunday night for the week ahead.

2. You save so much money making it yourself than buying it at the store

To be honest, there are only two kinds of healthy granola brands we actually like at the store. 

We always look for ones with all natural ingredients and without refined sugar. Most of the time we don’t even buy them because they are super pricey for the small amount you get in the bag. 

Making your own granola at home can save you so much money. You can make this spiced maple apricot granola for a fraction of the price you would buy it in a health food store.

3. You get to choose the ingredients you want in it

The best part about making homemade granola is that you get to choose the ingredients you want to put in your granola.

Like we said earlier, we prefer granola without refined sugar and unhealthy oils.

Making homemade granola allows you to add what ever you want to it. You can add different kinds of sugars (like maple syrup and coconut sugar), oils (like coconut oil), and any mix of your favorite dried fruit and nut mix.

What’s in the Spiced Maple Apricot Granola?

Gluten-free Oats: We love using gluten-free oats in our granola, because we try to limit the amount of gluten we eat in a day. If you are gluten intolerant, then these would be a great option for you to use as well. Regular oats, work just too!

Coconut Oil: When making granola, we prefer to use coconut oil. It’s super healthy. If you are worried that it will make your granola taste like coconut, we can attest that it certainly does not affect the flavor.

Maple Syrup: The maple syrup is he star of the show. It’s what gives this granola it’s maple flavor, and binds the oats together to make the clusters.

Coconut Sugar: Coconut sugar is a great and super healthy substitute for brown sugar. It adds a caramel taste to the granola.

Cinnamon: We add cinnamon to just about everything we can, and the cinnamon adds a depth of spiced flavor to the granola.

Ginger: The addition of ginger to this recipe adds another layer of tang and spice. It’s a subtle, but delicious flavor.

Dried Turkish Apricots: We love adding all kinds of dried fruit to our granola, but apricots are such a delish, and sweet addition. Every time we add them to our granola, we are reminded how much we love them.

What Causes Granola to Stick Together and How Do I Make Granola Clusters?

As the granola bakes in an even layer in the oven, the sugars (the maple syrup and coconut sugar) caramelize and make the oats stick together.

Another important step to create the big crunchy clusters in your oatmeal is to allow the oatmeal to set for 1 hour after removing it from the oven. This allows the oatmeal to harden and solidify together. Then you can use your hands to break the oatmeal into clusters.

Ingredients

  • 1/2 cup melted coconut oil
  • 1/2 cup maple syrup
  • 1/3 cup coconut sugar
  • 1 tbsp vanilla
  • 2 tsp cinnamon
  • 2 tsp ground ginger
  • 1/2 tsp salt
  • 5 cups gluten free oats

Instructions

  1. Preheat oven to 325 F. Line baking sheet with parchment paper.
  2. Whisk coconut oil, maple syrup, coconut sugar, vanilla, cinnamon, ginger, and salt in a large mixing bowl.
  3. Add oats and coat the maple syrup mixture over the oats using a wood spoon.
  4. Dump and spread the hot mixture in an even layer across the prepared baking sheet. Press the oats firmly into the baking sheet using the back of the wooden spoon.
  5. Bake for 15 minutes, rotate the pan, and bake for another 15 minutes.
  6. Let the granola cool for 1 hour.
  7. Using your hands, break the granola into clusters. Transfer to a mason jar or air-tight container. 
  8. Enjoy on top of yogurt, on top of a smoothie bowl or eat by the handfuls.
