- 1/2 cup melted coconut oil
- 1/2 cup maple syrup
- 1/3 cup coconut sugar
- 1 tbsp vanilla
- 2 tsp cinnamon
- 2 tsp ground ginger
- 1/2 tsp salt
- 5 cups gluten free oats
Instructions
- Preheat oven to 325 F. Line baking sheet with parchment paper.
- Whisk coconut oil, maple syrup, coconut sugar, vanilla, cinnamon, ginger, and salt in a large mixing bowl.
- Add oats and coat the maple syrup mixture over the oats using a wood spoon.
- Dump and spread the hot mixture in an even layer across the prepared baking sheet. Press the oats firmly into the baking sheet using the back of the wooden spoon.
- Bake for 15 minutes, rotate the pan, and bake for another 15 minutes.
- Let the granola cool for 1 hour.
- Using your hands, break the granola into clusters. Transfer to a mason jar or air-tight container.
- Enjoy on top of yogurt, on top of a smoothie bowl or eat by the handfuls.
