Spiced Maple Apricot Granola

Ingredients

  • 1/2 cup melted coconut oil
  • 1/2 cup maple syrup
  • 1/3 cup coconut sugar
  • 1 tbsp vanilla
  • 2 tsp cinnamon
  • 2 tsp ground ginger
  • 1/2 tsp salt
  • 5 cups gluten free oats


Instructions

  1. Preheat oven to 325 F. Line baking sheet with parchment paper.
  2. Whisk coconut oil, maple syrup, coconut sugar, vanilla, cinnamon, ginger, and salt in a large mixing bowl.
  3. Add oats and coat the maple syrup mixture over the oats using a wood spoon.
  4. Dump and spread the hot mixture in an even layer across the prepared baking sheet. Press the oats firmly into the baking sheet using the back of the wooden spoon.
  5. Bake for 15 minutes, rotate the pan, and bake for another 15 minutes.
  6. Let the granola cool for 1 hour.
  7. Using your hands, break the granola into clusters. Transfer to a mason jar or air-tight container. 
  8. Enjoy on top of yogurt, on top of a smoothie bowl or eat by the handfuls.
