If you’re anything like us, you always crave something sweet at the end of a meal. It doesn’t matter if it’s lunch or dinner, we always have to have some sort of dessert.

That’s when we thought of creating a healthy dessert bar that would satisfy our sweet tooth cravings, and we wouldn’t feel guilty about indulging after every meal. After testing several variations of these vegan chocolate brownie protein bars, we landed on the perfect recipe!

These chocolate brownie protein bars are the perfect healthy snack for any time of day. The blend of creamy almond butter and chocolate is so delicious. We would eat the whole pan if we could!

What’s in the No-Bake Chocolate Brownie Protein Bars?

Creamy Almond Butter: You can use any almond butter you would like for this recipe, however, a creamy almond butter creates a better consistency in these bars if you don’t want the added crunch.

Chocolate Protein Powder: This is what gives the bars their name! Keep reading to see what protein powder we recommend using for this recipe.

Cacao Powder: This adds an extra chocolate-y flavor to the protein bars for a richer flavor.

Maple Syrup: Maple syrup adds a bit of sweetness to the base of the protein bars. It’s such a delicious sweetener alternative.

Almond Milk: We found that without adding some almond milk to the protein bar base, the mixture came out too dry. Adding a couple splashes of almond milk makes the mixture more creamy and smooth.

Chocolate Chips: The melted chocolate chip layer adds more sweetness to this dessert protein bar. We can’t imagine the recipe without it!

Coconut Oil: Melting coconut oil with with chocolate chips helps the chips melt more evenly without getting too burnt in the microwave. The coconut oil also adds some shine to the chocolate coating.

M&Ms: Any excuse we have to add M&Ms to a recipe, we know it has to happen. The crushed M&Ms are the perfect topping.

    There are so many protein powder options out there. It can be overwhelming. You can go to the store and see so many different options like, brown rice protein, WHEY protein, and hemp protein. 

    When finding one that was perfect for us and for this recipe, we had to find one with the best natural ingredients. That’s when we tried Tropeka protein powder.

    Ingredients

    Units Scale
    • 3/4 cup creamy almond butter (or your preferred nut butter)
    • 1/4 cup chocolate protein powder
    • 2 tbs cacao powder
    • 2 tbs maple syrup
    • 4 tbs almond milk
    • 2/3 cup dark chocolate chips
    • 1 tbs coconut oil
    • 1/4 cup M&Ms, crushed

    Instructions

    1. Line a loaf pan with parchment paper.
    2. In a medium mixing bowl, mix almond butter, chocolate protein powder, cacao powder, maple syrup and almond milk together.
    3. Press the mixture into the bottom of the loaf pan. We like to make our portion bars thicker, so the mixture often does’t spread the whole length of the pan.
    4. Melt the chocolate chips and coconut oil in the microwave, stopping to stir every 30 seconds until completely melted.
    5. Pour chocolate over the protein bar base and spread evenly across the bars.
    6. Crush M&Ms in a plastic bag. We like to use a rolling pin to crush them into finer pieces. Sprinkle the crushed M&Ms on top. Allow bars to harden in freezer for 2 hours.
    7. Slice into squares and enjoy!

    Notes

    We like to keep our protein bars in the freezer, because they do soften easily. Keep protein bars in an airtight container in your freezer.
