It has all the cozy, fall-inspired flavors tucked between two slices of golden sourdough. It’s herby, slightly sweet, salty, and filled with gooey melted cheese.

This hot toasted sandwich is sure to make any day feel a little special. If you’re anything like us, a good meal can make the day better, and a lot of times our comfort meals lean toward making sandwiches. These Turkey Apple Bacon Cheddar Sandwiches are layered with a homemade herby mayo, thinly sliced apples, smoky crispy bacon, savory deli turkey, and layers of white cheddar cheese that melt into every nook of the sandwich. They are toasted until the sourdough is golden and crisp, and the cheddar is perfectly gooey throughout. It’s best if enjoyed straight off the skillet while the cheese is melty.

They’re savory, slightly sweet, and herby – basically, they fall between two slices of sourdough. Make these sandwiches for a fall lunch or easy dinner. They also keep great for leftovers if you are a meal prepper!

Tips for making Turkey Apple Bacon Cheddar Sandwiches

  • Choose a tart, crisp apple. Granny Smith apples are perfect for these sandwiches because their tart flavor balances the richness of the bacon, cheddar, and mayo.
  • Thinly slice the apples. Make sure the apples are thinly sliced so that you can easily bite into the sandwich and so that it cooks through the sandwich evenly.
  • Make the rosemary-thyme mayo ahead of time. Before you start assembling the sandwich, whisk together the mayonnaise, herbs, and seasonings in a small bowl. Let the spread sit for about 10-15 minutes so the flavors meld together.
  • Butter the outside of the slice of bread bread for a golden crust. Spread a thin layer of butter on the outside of each sourdough slice. As it cooks, the butter will brown and get crispy.
  • Cook low and slow. This sandwich has a lot of fillings, so the best way to evenly melt the cheese without burning the outside of the bread is to cook on medium-low heat for about 5-6 minutes on each side. Or until the cheese is melted through.

Why is my cheese not melting all the way through?

We recommend cooking low and slow to evenly heat and melt the cheese. If you see some of the cheese hasn’t melted in the center, briefly cover the skillet for 1-2 minutes. This will trap the heat and melt the cheese without making the bread soggy.

What type of turkey works best for this sandwich?

We recommend using a deli-sliced roasted turkey for convenience. If you have any leftover roasted turkey, you can use that as well.

Can I use a different cheese?

Yes! We love how the white cheddar cheese pairs so well with the apple, but gruyere, provolone, or gouda would be a delicious substitute for white cheddar cheese.

What to Serve with these Turkey Apple Bacon Cheddar Sandwiches

These sandwiches pair well with a side of chips or a green salad with a vinaigrette dressing.

If you’re wanting something more fall-inspired, pair with a side of soup or roasted veggies.

Storing leftover Turkey Apple Bacon Cheddar Sandwiches

Let the sandwiches cool completely and store them in an airtight container or plastic bag for up to 3-4 days in the refrigerator.

The most convenient way to reheat these sandwiches would be in the microwave.

But if you want to revive the crispness of the bread, reheat the sandwiches in a skillet over medium-low heat or the oven at 350°F until they are warmed through and crisp.

Description

This toasted turkey apple bacon cheddar sandwich layers deli turkey, crisp apple slices, crispy bacon, white cheddar cheese, and herby mayo on sourdough bread. Toasted until golden and melty, it’s an easy fall sandwich recipe perfect for cozy lunches.

Ingredients

Units Scale
  • 8 slices Sourdough bread
  • 1 lb Turkey meat, sliced
  • 1 Granny Smith apple, thinly sliced
  • 8 strips bacon
  • 8–10 slices of white cheddar
  • 4 tbsp butter (for spreading onto toast bread)

Rosemary-Thyme Mayo Spread

  • 1/2 cup mayonnaise
  • 1/2 tsp Rosemary
  • 1/2 tsp Thyme
  • 1 tsp Onion powder
  • 1 tsp Garlic powder
  • Pinch of salt and pepper

Instructions

  1. Preheat the oven to 400°F for cooking the bacon. Generously grease a bundt pan with butter or nonstick cooking spray. Make sure to get into all the edges and crevices of the pan so that the bread releases easily. Sprinkle the inside of the bundt pan with brown sugar for extra caramelization.
  2. In a small mixing bowl, whisk together mayonnaise, herbs, onion powder, garlic powder, and salt and pepper.
  3. Spread a thin layer of butter on one side of the bread slices. This will give the outside of the sandwiches a crisp, brown crust.
  4. Spread a layer of rosemary-thyme mayonnaise spread on both top and bottom slices of bread.
  5. Layer the sandwich. Add several slices of turkey meat, a couple of slices of Granny Smith apple, cheese, and bacon. Place the other piece of bread on top. Assemble the other sandwiches.
  6. Heat a skillet or griddle over medium-high heat. Place the sandwiches on the hot griddle and gently press down. Cook each side for 4-6 minutes until the sandwiches are golden brown and the cheese is melty. If you notice the sandwiches are cooking too quickly on the bottom before the cheese is melted, reduce the heat. It’s better to go low and slow.
  7. Once the sandwiches are done, slice in half and serve with a side of chips or a side salad and enjoy.
