Ingredients

Dry Ingredients

  • 1 1/2 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup tapioca starch
  • 1 tsp baking soda
  • 1 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 pinch sea salt

Wet Ingredients

  • 3 eggs
  • 1/2 cup maple syrup
  • 1 tsp vanilla
  • 2 bananas (ripe, mashed)
  • 2 tbsp coconut oil (melted)
  • 1/2 cup pumpkin purée

Pumpkin Spice Crumble

  • 2/3 cup almond flour
  • 1/3 cup coconut sugar
  • 2 tsp pumpkin spice
  • 1/4 cup finely, crushed walnuts
  • 3 tbsp coconut oil (melted)

Sweet Glaze (optional & not paleo)

  • 1 cup powdered sugar
  • 1/2 tsp cinnamon
  • 1 tbsp coconut milk

Instructions

Pumpkin Spice Crumble

  1. Add flour, sugar, spices, finely crushed walnuts, and melted coconut oil to a bowl. Mix with hands to incorporate ingredients until a crumble is formed. Set aside – will be added as topping before baking.

Pumpkin Bread Batter

  1. Preheat the oven to 350°F. Grease your loaf pan with ghee butter/olive oil/avocado oil. *Option to line with parchment paper so removal of loaf from pan after baking is smooth.
  2. In a large sized bowl whisk together almond and coconut flour, tapioca starch, baking soda, salt and spices.
  3. In medium bowl first mash your bananas. Then add eggs, pumpkin purée, maple syrup, vanilla and melted coconut oil and whisk until incorporated.
  4. Pour wet mixture into the flour mixture and stir until combined.
  5. Pour the batter into the pan, top with pumpkin spice crumble and place in oven. Cook for about 35 minutes, until top is golden brown. Check for doneness by inserting a toothpick. If the toothpick comes out clean, remove from oven.
  6. Set on cooling rack and let cool for about 20 minutes.

Sweet Glaze

  1. While the bread is cooling, make your sweet glaze! In a small bowl, combine powdered sugar, pumpkin spice and 1 tbsp of milk.
  2. Whisk together until desired consistency is achieved. **See notes**

Notes

*Easy was to line loaf pan with parchment paper:  Grease pan – this allows the parchment paper to stick to the sides rather than laying in the pan loosely. Cut the parchment paper the same width (long side) as the pan. Place inside pan. Cut to exact measurements or fold parchment paper into side of pan. The parchment paper should peak a little above the top of the pan. Once the bread is cooled and cooled you will be able to lift the loaf easily out of the pan by grabbing the parchment paper on either side and raising the loaf out of the pan.

*Sweet Glaze: Powdered sugar does not follow the paleo diet, so you can opt out of making this. We added the sweet glaze for visual and more sweetness but the bread with the crumble is perfectly sweet on its own. If you want a paleo powdered sugar alternative, finely blend 1 cup of coconut sugar and 2 tsp of tapioca flour until it reaches a consistency similar to powdered sugar. 

**Perfect sweet glaze consistency: Wanting a thicker sweet glaze? Add more powdered sugar. Wanting a thinner sweet glaze? Add a couple tsp of coconut milk at a time until desired consistency is achieved.
