We have been following a paleo diet for about four years now. Initially, the paleo lifestyle was intriguing because it was so similar to how we were already eating. Out of sheer curiosity, we started limiting some grains and dairy and incorporating more lean meats, fruits and vegetables. And it works very well for our lifestyle! We don’t believe in completely eliminating food groups and will occasionally indulge in grains, legumes and dairy. I mean who can pass up a warm ham and cheese croissant or a cone of ice cream? Balance is so important!

What makes this paleo bread so great? 

When I took a bite of this paleo pumpkin bread recipe yesterday, I teared up a little bit. It is everything you dream about fall in each bite!! It is THAT GOOD!! This bread loaf full of flavor, moist and exceeds your fall pumpkin dreams!

Full of flavor! You can’t miss the pumpkin flavor in this paleo pumpkin bread. Pumpkin puree is blended into the batter and the bread is topped with pumpkin spice crumble. Hello pumpkins and hello fall!! 

It is not a crumbly bread! The flour blend with addition to bananas, and maple syrup as a sweetener created a moist bread. The addition of the maple syrup vs. coconut sugar or other sweetness provide the perfect amount of sweetness and does not effect the texture of this bread.

It is easily sliceable! The crust of this bread was firm but not crumbly creating a the perfect slice of pumpkin bread. Additionally, the tapioca flour makes the bread have a fluffier texture. 

Can we talk about the Crumble Topping?! We took this pumpkin bread to the next level with a pumpkin spice crumble. Walnuts add the perfect amount of texture to this crumble.

Paleo Baking Ingredients

Almond Flour: In paleo recipes, almond flour functions similarly to all purpose flour in traditional baking. Almond flour can add a nice nutty flavor to baked goods. Having a combination of almond flour with tapioca starch tends to add some fluffiness to the bread and balance out the dense nature of almond flour in baked goods. 

Coconut Flour: Coconut flour is made from dried, ground coconut meat. It is higher in fiber, meaning the flour absorbs more liquid than alternative flours. Thus, it often needs more liquid to balance these effects so you don’t have a dry crumbly bread. In this recipe, the combination of flours creates a nice balance of texture when the bread is baked. 

Tapioca Starch: Tapioca flour is made from the root of cassava plant. Tapioca flour seems to add a bit more fluffiness to the bread vs arrowroot flour which can be a bit drying in baking goods. It also helps with browning of the bread and getting that desired crust.

Maple Syrup: We found that adding maple syrup vs honey or coconut sugar added the perfect amount of sweetness, without effecting the texture of the bread. 

Coconut oil: We used coconut oil for this recipe. Other good oil alternatives are avocado oil, olive oil or ghee butter!

Ingredients

Dry Ingredients

  • 1 1/2 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup tapioca starch
  • 1 tsp baking soda
  • 1 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 pinch sea salt

Wet Ingredients

  • 3 eggs
  • 1/2 cup maple syrup
  • 1 tsp vanilla
  • 2 bananas (ripe, mashed)
  • 2 tbsp coconut oil (melted)
  • 1/2 cup pumpkin purée

Pumpkin Spice Crumble

  • 2/3 cup almond flour
  • 1/3 cup coconut sugar
  • 2 tsp pumpkin spice
  • 1/4 cup finely, crushed walnuts
  • 3 tbsp coconut oil (melted)

Sweet Glaze (optional & not paleo)

  • 1 cup powdered sugar
  • 1/2 tsp cinnamon
  • 1 tbsp coconut milk

Instructions

Pumpkin Spice Crumble

  1. Add flour, sugar, spices, finely crushed walnuts, and melted coconut oil to a bowl. Mix with hands to incorporate ingredients until a crumble is formed. Set aside – will be added as topping before baking.

Pumpkin Bread Batter

  1. Preheat the oven to 350°F. Grease your loaf pan with ghee butter/olive oil/avocado oil. *Option to line with parchment paper so removal of loaf from pan after baking is smooth.
  2. In a large sized bowl whisk together almond and coconut flour, tapioca starch, baking soda, salt and spices.
  3. In medium bowl first mash your bananas. Then add eggs, pumpkin purée, maple syrup, vanilla and melted coconut oil and whisk until incorporated.
  4. Pour wet mixture into the flour mixture and stir until combined.
  5. Pour the batter into the pan, top with pumpkin spice crumble and place in oven. Cook for about 35 minutes, until top is golden brown. Check for doneness by inserting a toothpick. If the toothpick comes out clean, remove from oven.
  6. Set on cooling rack and let cool for about 20 minutes.

Sweet Glaze

  1. While the bread is cooling, make your sweet glaze! In a small bowl, combine powdered sugar, pumpkin spice and 1 tbsp of milk.
  2. Whisk together until desired consistency is achieved. **See notes**

Notes

*Easy was to line loaf pan with parchment paper:  Grease pan – this allows the parchment paper to stick to the sides rather than laying in the pan loosely. Cut the parchment paper the same width (long side) as the pan. Place inside pan. Cut to exact measurements or fold parchment paper into side of pan. The parchment paper should peak a little above the top of the pan. Once the bread is cooled and cooled you will be able to lift the loaf easily out of the pan by grabbing the parchment paper on either side and raising the loaf out of the pan.

*Sweet Glaze: Powdered sugar does not follow the paleo diet, so you can opt out of making this. We added the sweet glaze for visual and more sweetness but the bread with the crumble is perfectly sweet on its own. If you want a paleo powdered sugar alternative, finely blend 1 cup of coconut sugar and 2 tsp of tapioca flour until it reaches a consistency similar to powdered sugar. 

**Perfect sweet glaze consistency: Wanting a thicker sweet glaze? Add more powdered sugar. Wanting a thinner sweet glaze? Add a couple tsp of coconut milk at a time until desired consistency is achieved.
