A cozy soup for those days when you’re craving a heartwarming home-cooked meal. This spicy white bean and sausage gumbo is made with a sautéed vegetables, a creamy broth, cajun spice, white beans and andouille sausage to make a flavor-packed bowl.
Our twist on New Orleans style gumbo is inspired by cold winter evenings, visiting family in Louisiana, gathered around the table with bowls of steaming hot gumbo. It was a special recipe to make and we hope it is comforting to those you serve around your table too.

What makes gumbo gumbo?
A Louisiana-style soup with a thick sauce and a mixture of meats and vegetables. Most commonly, gumbo is made with seafood, meats and andouille sausage.
Main components of gumbo:
- Roux (used to thicken and/or add flavor)
- Your choice or vegetables, meat, seafood, andouille sausage
- Cajun seasonings
- Rice
What is a Roux?
A roux is equal parts flour and fat. It is used to either thicken sauces, broths or gravies. But for cajun recipes, roux’s are used to add flavor.
We recommend an extra virgin olive oil or butter for this recipe. Both of these fats have a lower smoke point and most likely won’t burn while making a lighter roux.
If a recipe does call for making a darker roux, you will need to use a fat with a higher smoke point, you can use oils like vegetable oil.
How do you make a Roux?
The color a roux will change the color of your gumbo broth. Traditionally, gumbo is made with a brown roux. The darker the roux, the longer it has been cooked.
For this recipe, we made a light roux which adds thickness to the sauce but little flavor. But don’t worry, this dish is full of cajun spices!
The darker the roux, the less thickening power.
How long does spicy white bean and sausage gumbo take to make?
Our gumbo recipe just takes about 1 hour to make. Although different recipes will vary in range. Some gumbos can take up to 4 hours to make if they are slow cooked or require you to make a darker roux.

Spicy White Bean and Sausage Gumbo
Description
Spicy white bean and sausage gumbo is made with a sautéed vegetables, a creamy broth, cajun spice, white beans and andouille sausage
Ingredients
6 cup chicken broth
1 lb andouille sausage, sliced
1 onion chopped
4 cloves garlic, minced
2 stalks celery, sliced
2 carrots, peeled and chopped
3 cans cannellini beans
3 stalks kale, chopped and stems removed
White Roux
1/2 cup all purpose flour
1/2 cup olive oil
Cajun Seasoning
1 tsp garlic powder
1/2 tsp black pepper
1 tsp onion powder
1/2 tsp dried oregano
1/4 tsp cayenne
1/2 tsp thyme
Add-ins
1 1/2 cups rice
fresh parsley
green onions
Instructions
- In a dutch oven/deep pot, make your roux. Add equal parts flour and oil to the pot over medium heat. Stir and whisk constantly for 3-4 minutes until thickened. Remove from heat.
- In a separate skillet over medium-high heat, brown sausage. Cook on either side for a couple minutes. Remove sausage from pan and place on a plate to add back in later.
- In the same skillet you made the sausage, add your vegetables – chopped onion, celery and carrots. Sauté over medium heat until soft. Once soft, add in garlic and seasons. Stir and sauce for 2 more minutes.
- Add vegetable mixture to your roux pot and reheat to medium heat. Add broth to pot and let it simmer for 5 minutes. Stirring occasionally.
- Add in cannellini beans and stir to mix. Lastly add in kale, str and cover. Turn heat to medium-low and let it simmer for 25 minutes.
- While simmering, make your rice according to package instructions.
- Once gumbo is done, assemble your gumbo bowl. Add a scoop of rice to the bottom of a bowl and cover with a couple ladles of gumbo. Top with fresh parsley and green onions.
