What You’ll Need to Make Italian Meatball Soup

  • Yellow Onion: A diced yellow onion is great for red sauce soups because they add a sweet flavor. They are also a good base for almost any soup or sauce.
  • Extra virgin olive oil: Our favorite light cooking oil for sautéing veggies for the soup.
  • Salt: Salt balances out the sweetness of the cookies and enhances the flavors of the spices as well.
  • Garlic: Adds a nice savory flavor to the broth of the soup.
  • Tomato paste: Tomato paste has a very strong tomato flavor and enhances the tomato flavor of the broth.
  • Italian Seasoning: Used in both the soup broth and meatballs. A delicious blend of oregano, thyme, rosemary, basil and marjoram. All these seasonings add delicious depth of seasoning to the soup and meatballs.
  • Red Wine: Use a dry red wine, like a Chianti wine because it pairs so well with tomato sauces
  • Marinara Sauce: Thickens the broth and adds a delicious tomato flavor.
  • Canned diced tomatoes: Diced tomatoes help to add texture and more tomato flavor to the soup.
  • Chicken broth: Chicken broth adds some flavor and helps to thin the sauce.
  • Heavy Cream: Makes the broth creamy!!
  • Trotolle noodles: These are some FUN noodles!! And all the curls help to collect all the sauce!

Can I use frozen meatballs in the Italian meatball soup? 

Of course, frozen meatballs will work just fine. Make sure you thaw them and cook them according to package instructions. Compared to homemade, they may vary a bit in taste and texture, but should do the trick!

What are the best noodles to use for Italian meatball soup?

For this recipe, we recommend using noodles that can collect all the soup sauce.They also just make the soup more interesting and fun!! Some of our favorite curly noodles are fusilli, cavatappi, or trotolle

What do I do with leftovers?

Have leftovers or want to meal prep for dinners throughout the week? Here's what we recommend for storing and reheating.

  • Refrigerate: It will be good in the fridge for up to 3 days. You can reheat in the microwave or stovetop over medium heat. 
  • Freeze: If you plan on freezing, make WITHOUT the noodles!! will be good up to 3 months in the freezer. We would recommend portioning out 1-2 cups of soup into freezer-safe containers. When you want to eat, just reheat on stovetop over medium heat. Make noodles separately and add in soup after heated.

 A creamy tomato broth with Italian style homemade meatballs and fun artisan noodles make a delicious and elegant dinner for a date night in or a delicious dinner with your family. 

Ingredients

Italian Meatball Soup

1 yellow onion, diced

1 Tbsp extra virgin olive oil

4 garlic cloves, minced

3 Tbsp tomato paste

2 tsp Italian seasoning

1/4 cup of red wine

3 cups marinara sauce

1 can diced tomatoes

4 cups chicken broth

2 cups water

1/4 cup heavy cream

10 oz trotolle noodles

1820 meatballs

Homemade Italian Meatballs

1 lb ground beef

2 eggs

1/4 cup almond flour (or bread crumbs)

1/4 cup parmesan cheese

1 tsp Italian seasoning

1 tsp red peper flakes

2 tsp minced onion seasoning

Salt + pepper to season

Instructions

  1. Start by making meatballs. Here’s the directions for making homemade meatballs. Preheat oven to 425°F. In a large bowl, add ground beef, eggs, almond flour, parmesan cheese, and seasonings. Mix together all the ingredients with your hands until they are thoroughly combined. Form into 12-14 even-sized meat balls. Place on a parchment paper- lined baking sheet. Cook for 22-25 minutes until reaches internal temperature of 165°F.
  2. While your meatballs are cooking, start making your soup. Start by chopping onions and garlic cloves. 
  3. In a skillet over medium-high heat, add olive oil, onion, tomato paste and Italian seasoning. Cook until soft and fragrant. 
  4. Add in wine and stir to scrape bits off the bottom of the pan.
  5. Pour in chicken broth, marinara, water and uncooked noodles.
  6. Stir, cover and cook for about 10-12 minutes or until pasta is al dente. 
  7. Add in cooked meatballs, heavy cream and let it simmer for a couple more minutes.
  8. Pour in a bowl to serve and top with fresh parmesan, basil, salt and pepper.

Notes

If using frozen meatballs: Make sure you thaw them and cook them according to package instructions.
