These homemade Kudos bars are a recreation of a the nostalgic granola bars with chewy peanut butter granola base, dipped and drizzled in chocolate and sprinkled with M&M’s. They’re bigger and have a fresher flavor. Perfect for lunchboxes, after-school snacks, and satisfying childhood cravings.

- 1 1/2 cups oats
- 1 1/2 cups of puffed rice cereal
- 1/2 cup brown sugar
- 1/2 cup honey
- 1/2 cup peanut butter
- 1/2 tsp salt
- 2 tsp vanilla extract
- 1 cup semi-sweet chocolate chips
- 1 tsp coconut oil
- 1/4 cup mini M&M’s or mini chocolate chips
Instructions
- Measure out rice cereal and oats into a bowl. Set to the side.
- In a saucepan over medium heat, melt brown sugar, honey, and peanut butter. Stir the mixture frequently until it is melted and smooth.
- Stir in salt and vanilla.
- Pour over cereal mixture and use a silicone spatula to stir until evenly combined.
- Pour the mixture into an 8×8-inch pan lined with wax paper. Firmly press the mixture into an even layer in the pan. Chill in the refrigerator for at least 2 hours.
- Once firm, melt the chocolate chips and coconut oil on the stovetop or in the microwave. Stirring to melt the chocolate evenly.
- Remove the bars from the pan and cut into 12-16 rectangle-shaped bars. Dip the bottoms in chocolate and place on wax paper. Drizzle the top of the bars with a zig-zag of chocolate and sprinkle with mini M&M’s.
- Chill the bars for an additional hour in the fridge. Keep refrigerated for up to 1 week.
