For Christmas, we asked for a mini slow cooker for two reasons:

1.To make easy dinners for the week nights

2. A larger slow cooker wouldn’t fit, so we thought it would be fun to ask for a mini one. It’s perfect for cooking meals for two.

One of the first dinners we wanted to cook in our mini slow cooker was chicken tacos. We love how easy and simple this recipe is. It’s packed with flavor and satisfies our frequent craving for street tacos.

If you’re looking for something easy to make on a week night, this chicken can slow cook while you’re at work and be ready when you come home. It’s perfect for those busy week days or for a delicious meal at home on the weekends.

Growing up in Texas, we grew up eating tacos of all kinds. We would argue that Texas has some of the best street tacos around! 

Every time we bite into a street taco of any kind, we are reminded of why we love Tex-Mex food so much. It’s a comfort food for us, and it shaped a lot of our childhood growing up.

We wanted to recreate the classic taste of a street taco, but using a slow cooker. This is our healthier take on our beloved traditional street taco. We love how slow cookers marinate the seasonings into the chicken and make the meat so flavorful. These healthy slow cooker chicken street tacos for two are the perfect week night dinner!

    Boneless Chicken Breast: We love choosing chicken that’s completely natural. Not only is healthier for you, but it tastes better as well. 

    Spice Mixture: We wanted to create a taco seasoning that was rich in flavor. We aren’t afraid of seasoning when it comes to cooking meat. As the meat slow cooks the spices will enrich the meat and create a beautiful flavor.

    Mild Salsa: The salsa also adds a beautiful flavor and adds moisture to the meat—making the chicken super tender.

    Butter Lettuce: We making lettuce tacos. They are a lighter and healthier alternative to tortilla tacos. We love how the lettuce adds such a fresh flavor.

    Avocado: Adding avocado to your taco blends so beautifully with the chicken, as well as the feta cheese.

    Feta Cheese: We love topping our street tacos with feta cheese. It’s the perfect creamy addition to the top of the taco.

    Cilantro: Cilantro adds a wonderful, fresh taste to the taco. We love adding it to our tacos to balance the richness of the meat with a refreshing flavor.

    Lime Juice: A squeeze of lime juice across the top of the tacos adds acidity and citrus flavor.

    Ingredients

    Slow Cooker Taco Meat

    • 1/2 lb thawed chicken breast
    • 1/2 tbsp smoked paprika
    • 1/2 tbsp oregano
    • 1/2 tbsp onion powder
    • 1/2 tbsp garlic powder
    • 1 tbs cumin
    • 1/2 tbsp cinnamon
    • 1/2 tsbp chili powder
    • 1 white or yellow onion, chopped
    • 1 cup mild salsa

    Toppings for Tacos

    • 1 pkg butter leaf lettuce
    • cilantro
    • sliced avocado
    • feta cheese
    • 1 squirt lime juice


    Instructions

    1. Mix seasoning together until combined.
    2. Rub seasoning mixture on both sides of your chicken breasts. Place them in the bottom of your slow cooker. Add chopped onion and salsa. Cover and cook on LOW for 4-6 hours.
    3. When finished cooking, remove as much of the extra liquid as you can. Shred meat with fork.
    4. Remove leafs from the butter lettuce head.
    5. Layer each lettuce leaf with shredded chicken, lettuce, avocado, feta cheese, cilantro and lime juice.
    6. Add a lime slice for garnish. Enjoy!

    Notes

    *You can certainly make these tacos and use tortillas as the taco shell. It’s your choice, and either version is delicious!
