Description
A morning spin on a classic BLT with crispy bacon, fried eggs, fresh lettuce and tomato, chipotle mayo on a toasted everything bagel. This easy breakfast sandwich is savory, spicy, and super satisfying.

- 5 everything bagels
- 10 eggs
- 1 head of romaine lettuce
- 2 tomatoes
- 10 strips of bacon
- 1/3 cup Chipotle mayo
- 4 tbsp butter (for frying eggs)
Instructions
- Cook bacon in the oven. Preheat oven to 400ºF. Line a baking sheet with foil and place bacon strips in a single layer on the pan. Bake for 15-20 minutes until crispy. Transfer bacon to a paper-towel-lined plate to soak up any excess grease.
- Fry eggs in a skillet. Heat skillet over medium-low heat for about 5 minutes until hot. Melt 4 tablespoons of butter in the skillet and turn the skillet or move the butter around in the pan to coat the entire surface. Crack 4 eggs into the skillet and cook for a couple of minutes on each side until cooked through. If you like the eggs runny, cook a bit less.
- Place fried eggs on a plate and repeat the frying for the rest of the eggs. If your eggs start sticking, you may need to add a little more butter to the pan.
- Wash lettuce leaves, cut off the ends and any bad parts of the leaves. Cut the leaves in half so that they fit the size of the sandwich. Slice tomatoes into 8-10 thin slices.
- Slice and toast bagels in a toaster or toaster oven until crisp.
- Assemble a sandwich. Start by spreading a thin layer of chipotle mayo on both sides of the bread, layer with a couple pieces of lettuce, a slice of tomato, two fried eggs, and a couple slices of bacon. Best if enjoyed hot. Or if you’re prepping for breakfasts throughout the week, store ingredients separately in airtight containers in the fridge and assemble and warm up when you’re ready to eat.
