How to Make Breakfast BLT Sandwiches, Step by Step
Step 1. Cook bacon strips in the oven.
Once you cook bacon in the oven, you won’t go back to cooking it on the stovetop. It’s one of our favorite kitchen hacks because it cooks the bacon evenly and reduces the clean-up of cooking the bacon on the stovetop. You don’t have to worry about grease popping and splattering on you or your countertops.
Preheat the oven to 400°F and line a rimmed baking sheet with foil. Lay 10-12 strips of bacon on the baking sheet and bake in the oven for 15-20 minutes until crispy.
Once the bacon is done cooking, remove the bacon strips from the pan and place them on a paper towel-lined plate to soak up any extra grease.

Step 2. Fry eggs in the skillet and prep the other sandwich fillings.
If you’ve never fried eggs, we will break it down for you. It’s not that hard; the main thing is not to overcook the eggs because they can burn or stick to the sides and create a really crispy outside.
Start by heating a skillet over medium-low heat. This will give the eggs time to cook gently without burning the bottoms.
Fully coat the pan with 4 tablespoons of butter, making sure the entire surface of the pan is coated before adding the eggs.
Crack 3-4 eggs into the skillet at a time. It’s important you don’t overcrowd the skillet so that you have enough room to flip the eggs. Each sandwich is getting 2 eggs, so you will cook 2-3 batches of eggs for these bagel sandwiches.
Cook the eggs for a couple of minutes on each side for well-done eggs. For runnier eggs, cook for 30 seconds to a minute. Carefully flip the eggs over so that you don’t crack the eggs.
Repeat this cooking method for the other batches until all eggs are cooked.
Step 3. Slice and toast bagels. Assemble the sandwiches and enjoy while they’re warm.
Toast bagels so that they are warm and slightly crisp on the edges. Assemble the sandwiches while the bagels and eggs are still warm.
Spread a thin layer of chipotle mayonnaise on each bagel half. Then layer with bacon, lettuce, tomato slices, and two eggs. They’re best if enjoyed hot!

Tips for Making Breakfast BLT Bagel Sandwiches
- Cook bacon in the oven until crispy. The oven will cook the bacon evenly, but make sure to cook it until it’s nice and crisp. It will add the perfect salty crunch to every bite.
- Toast the bagels before assembling the sandwiches. Toasting will give the bread a slight crisp and crunch to each bite. It also prevents the bread from becoming soggy once you add the mayonnaise and juicy tomatoes.
- Don’t skip the chipotle mayo! It is the kick that this sandwich needs. It adds a bit of flavor and spice to each bite and pairs perfectly with the bacon, eggs, and fresh tomato. This sandwich also doesn’t have cheese, so it adds some extra moisture.
- Assemble the sandwiches while everything is still warm. Nobody wants cold eggs! For the best BLT, layer warm eggs, crispy bacon, and a hot, toasted bagel just before serving. That way the warmth melds the flavors together, and the texture is perfect.

Description
A morning spin on a classic BLT with crispy bacon, fried eggs, fresh lettuce and tomato, chipotle mayo on a toasted everything bagel. This easy breakfast sandwich is savory, spicy, and super satisfying.
Ingredients
- 5 everything bagels
- 10 eggs
- 1 head of romaine lettuce
- 2 tomatoes
- 10 strips of bacon
- 1/3 cup Chipotle mayo
- 4 tbsp butter (for frying eggs)
Instructions
- Cook bacon in the oven. Preheat oven to 400ºF. Line a baking sheet with foil and place bacon strips in a single layer on the pan. Bake for 15-20 minutes until crispy. Transfer bacon to a paper-towel-lined plate to soak up any excess grease.
- Fry eggs in a skillet. Heat skillet over medium-low heat for about 5 minutes until hot. Melt 4 tablespoons of butter in the skillet and turn the skillet or move the butter around in the pan to coat the entire surface. Crack 4 eggs into the skillet and cook for a couple of minutes on each side until cooked through. If you like the eggs runny, cook a bit less.
- Place fried eggs on a plate and repeat the frying for the rest of the eggs. If your eggs start sticking, you may need to add a little more butter to the pan.
- Wash lettuce leaves, cut off the ends and any bad parts of the leaves. Cut the leaves in half so that they fit the size of the sandwich. Slice tomatoes into 8-10 thin slices.
- Slice and toast bagels in a toaster or toaster oven until crisp.
- Assemble a sandwich. Start by spreading a thin layer of chipotle mayo on both sides of the bread, layer with a couple pieces of lettuce, a slice of tomato, two fried eggs, and a couple slices of bacon. Best if enjoyed hot. Or if you’re prepping for breakfasts throughout the week, store ingredients separately in airtight containers in the fridge and assemble and warm up when you’re ready to eat.
