No more canned green beans baked in bacon. Our green beans are full of flavor in every bite. Sautéed fresh green beans topped with caramelized shallots, crispy prosciutto and slivered almonds. The crisp, bright flavor of the green beans pair perfectly with sweet caramelized onions, salty prosciutto and crunchy slivered almonds. This side dish just takes about 20 minutes to make and will be a super simple side for your next holiday dinner party.

How to sauté green beans….

Everyone has their own preference on how to cook green beans. They can be boiled, steamed, roasted and sautéed – each cooking type results in a little be different texture of bean. 

For this recipe, we opted to sauté green beans because we found we were able to control the cooking more than we could with other cooking methods. 

How to perfectly sauté green beans:
  • Start by heating a skillet with some oil in it over medium-high heat. 
  • Add in fresh green beans and season.
  • Cook for 10-15 minutes over the stovetop, stirring occasionally. 

Cooking tip: Make sure you are stirring occasionally and that the beans aren’t burning on the bottom. It’s okay for them to brown a bit, but if they start to burn, reduce heat to medium-low and continue sautéing.

How to make caramelized shallots…

The crispy caramelized shallots are a fun twist to this dish! They have a similar to onions but their flavor is a bit more sweet and mild. They are also very delicate to cook with, so caramelizing them takes some patience. 

You will start by adding oil or butter to a skillet over medium-low heat. It is important that the stovetop is not too hot because the thinly sliced shallots cook very quickly. You want to caramelize them, not burn them. So, if you see that they are cooking too quickly and burning, reduce heat to low. 

They will cook low and slow. They should be golden brown and caramelized after about 15-20 minutes. Depending on how your oven cooks, you may need a little less time or a little more. You may have some crispy bits mixed with soft caramelized bits and that’s okay. It just adds to the texture and flavor.

Transfer the shallots to a paper-towel lined bowl and pat dry to remove any excess grease. Set the shallots aside until you are ready to plate.

How to make crispy prosciutto…

Prosciutto is one of our favorite meats to top salads, pastas, and mix in with green vegetables like asparagus and green beans. It is a a delicious swap for bacon in a lot of dishes too!! 

Prosciutto adds a rich flavor and a beautiful pop of color to these green beans. It’s salty, savory and slightly sweet and lacks the gamey flavor of bacon. Prosciutto is a cured meat and often doesn’t need to be cooked to be eaten, but the crispy prosciutto bits are exactly what these green beans need to make a statement. 

It’s super easy and quick to make crispy prosciutto! Heres what to do…

  • Preheat oven to 400ºF
  • Line baking sheet with parchment paper and bake for 10-12 minutes until crispy. 
  • Remove from heat and let them cool. 
  • Break into pieces with your hands and sprinkle over the top of the beans

Sautéed Green Beans with Caramelized Shallots and Crispy Prosciutto

Description

Sauted seasoned green beans topped with caramelized onions, crispy prosciutto and slivered almonds. A delicious side dish to pair with any dinner entree.


Ingredients

Units Scale
  • 2 lbs green beans
  • 4 cloves garlic
  • 4 tbsp salted butter
  • 1/4 tsp pepper
  • 1/2 tsp red pepper flakes
  • 6 shallots
  • 1/4 cup slivered almonds
  • 34 slices prosciutto crispy
  • Optional: sprinkle with a little bit of shredded parmesan


Instructions

  1. Make caramelized shallots. Slice shallot very thinly. If you have a mandolin, turn it to the thinnest setting and slice with that. 
  2. Fry shallots in 2 tbsp butter on medium-low heat. Make sure to watch them to not burn. The thin slices can burn easily. Caramelizing them should take anywhere from 15-20 minutes. Transfer shallots to a paper towel-lined bowl and pat to dry off excess grease.
  3. In a skillet over medium-high heat, add melt butter. Add green beans and toss in butter. Season with garlic, pepper + red pepper flakes. Sauté for 10-15 minutes. 
  4. While sautéing the green beans, preheat oven to 400ºF. Place slices of prosciutto on parchment lined baking sheet. Bake for 10-15 minutes until crispy. 
  5. Plate green beans and top with caramelized shallots + crispy prosciutto slices and slivered almonds.
