Tahini Kale Caesar Salad with Everything Bagel Croutons

Caesar salad girlies, we are about to turn you on to one of the best Caesar salads ever. We nixed the anchovies and eggs and created a dressing with the same rich and tangy flavor you love so much. If it were up to us, we’d be making this tahini kale caesar salad on repeat.

This modernized Caesar salad starts with a bed of fresh kale, dressed with a super simple tahini caesar dressing, topped with fresh parmesan reggiano and crispy Everything Bagel Seasoning croutons. Serve this salad with your favorite choice of protein or entree of choice.

Tahini Kale Caesar Salad Ingredients

Starting with the salad greens and dressing:

  • Kale: The base of the salad starts with fresh chopped kale. We prefer the freshness of the fresh kale leaves but if you’re looking to cut on prep time, the bags of pre-cut kale work just fine! If you opt for a different green for the base, we would recommend romaine, as it won’t get as soggy as a spring mix would.
  • Tahini: The main ingredient in the caesar dressing that adds a savory and nutty flavor. 
  • Garlic: One or two cloves seem to do the trick. Garlic is great in dressing for adding a punch of flavor to any dressing.
  • Lemon Juice and zest: All dressings need a bit of acidity to balance flavor and add a little kick.
  • Dijon Mustard: Adds a nice spice to the dressing.
  • Worcestershire Sauce: Traditional caesar dressing has anchovies in it. Worcestershire sauce is actually made from anchovies and gives you that tangy flavor that you love in caesar dressing.
  • Grated Parmesan Cheese: Parmesan has a sweeter flavor to it to help balance out the tangy flavor of the Worcestershire sauce and the lemon juice.

Everything Bagel Crouton Ingredients:

  • Sourdough bread loaf: Slice the loaf of bread into little cubes. Sourdough bread gives the croutons a nice flavor because the bread has more flavor to it versus a French loaf. 
  • Olive Oil: A generous drizzle of olive oil over the croutons will make the croutons crisp during cooking and will also help the seasonings stick to the bread. 
  • Garlic Powder: Adds an extra garlic flavoring to the croutons.
  • Everything bagel seasoning: What better way to complement the tahini dressing than with everything bagel seasoning! This seasoning is a blend of sesame seeds, poppy seeds, garlic, onion and salt.

What is Tahini?

If you are not familiar with tahini, it is a very versatile ingredient that is great for baking and cooking as well. It is made from sesame seeds and has a nutty undertone to it which makes it complementary to both savory and sweet foods.

Tips for Making an Outstanding Dressing

  • Choose a smoother tahini paste: For a smoother dressing, you want to stick with a tahini that isn’t too thick. Some tahini brands taste amazing, but the consistency of the tahini is a little too thick. If that is all you have, it’s okay. Our favorite tahini's are Seed and Mill or Krinos.
  • Use water to thin: An interesting thing happens when you add lemon juice to tahini...it clumps and thickens quickly! But don’t worry! All you need to do to thin the dressing is add water by the table spoon, stirring until the desired consistency is reached. 
  • Chill the Dough: The dough will need to chill for 30 minutes before baking—otherwise the cookies may spread out more than hoped for. In that time, you can preheat the oven to the desired temperature.

Tahini Kale Caesar Salad with Everything Bagel Croutons

Tahini Kale Caesar Salad with homemade Everything Bagel Seasoning croutons. 

Ingredients

Scale

Tahini Salad and Dressing

12 bunches of kale leaves

4 tbsp of tahini

1 clove garlic

2 tbsp lemon juice

1 tsp lemon zest

1 tsp Dijon mustard

2 tsp Worcestershire sauce

1/4 cup grated parmesan cheese

Salt Pepper

24 tbsp water to loosen consistency of dressing

Fresh shaved parmesan for topping

Everything Bagel Croutons

1/2 loaf of sourdough bread, cubed

3 tbsp olive oil

2 tsp garlic powder

12 tbsp everything bagel seasoning

Instructions

  1. Preheat oven to 375°F for cooking the croutons. 
  2. Slice and cube sourdough loaf into small cubes and lay out on a baking sheet. Drizzle with olive oil, using your hands toss around the bread cubes on the baking sheet to coat. Sprinkle with garlic powder and everything bagel seasoning. 
  3. Place croutons in oven and bake for 15 minutes, until golden brown and crispy. 
  4. While the croutons are cooking, make your salad dressing. In a medium bowl, add tahini, garlic, lemon juice and zest, dijon, Worcestershire sauce and parmesan cheese. Stir to combine. 
  5. The dressing will thicken quickly after stirring. That’s okay! Just add warm water, one tablespoon at a time, until you reach a thinner constancy. Season with salt and pepper if needed. 
  6. Chop fresh kale leaves, removing the large stems. Drizzle dressing over kale and massage into the leaves. This will soften the leaves a bit. Top with everything bagel croutons and enjoy!
