The blend of herbs, garlic, veggies, chicken and noodles in a warm broth are a combination that no other soup can quite beat.

Super Simple Chicken Noodle Soup

What You’ll Need

  • Rotisserie chicken
  • Butter
  • Yellow onion
  • Celery
  • Carrots
  • Garlic
  • Fresh thyme
  • Dried bay leaves
  • Egg noodles
  • Chicken Broth
  • Lemons
  • Fresh Parsley
  • Salt and pepper

What makes this recipe so simple? 

We made a couple swaps that will cut out time and effort for making a chicken noodle soup that is just as delicious!

  1. Use rotisserie chicken! A lot of recipes will have you cook chicken before making the soup. But a rotisserie chicken is just as good! You’ll just need to pull the chicken from the bone and add to the soup.
  2. Use one pot! You don’t need to cook the noodles in a separate pot from the soup. Save time and dishes to clean by tossing the uncooked noodles straight into the broth to cook until al dente.
  3. You just need three seasonings. Some chicken noodle recipes will have a list of seasonings to add to the broth. We don’t think you need a lot of competing flavors to make a delicious broth. All you’ll need is thyme, bay leaves and a lot of fresh garlic.

Here’s a few tips for making Chicken Noodle Soup…

  • Don’t skimp on the seasonings. If your soup is lacking flavor, add some more thyme or lemon juice, maybe a little more salt and pepper. Adjust the seasonings to your liking!
  • Make noodles separately if not serving right away. The noodles will soak up a lot of the broth. If you do not plan to serve right away, cook the noodles separately and add into each bowl when you’re ready to serve.
  • Use egg noodles. They have a slight egg-y taste that gives chicken noodles soup it’s iconic flavor. 
  • Butter vs Oil. You can use either one to sauté the vegetables. We cooked our vegetables in butter because it will make the broth taste a bit richer.

How to store chicken noodle soup

If you plan on storing chicken noodle soup, skip this step! Step 5 will tell you to add the noodles into the broth and cook. Only do this if you expect to serve the soup right away. 

If you do not plan to store the soup right away, cook the noodles separately and store them in an airtight container. When you’re ready to eat, add some noodles to the broth soup mixture and heat before serving. 

If you do have leftovers soup with noodles in the broth, store in an airtight container for 1-2 days. The noodles will likely be too soggy to eat the longer it sits in the broth.

Description

Chicken noodle soup made easier! Nothing beats this classic blend of herbs, garlic, veggies, chicken and noodles in a warm broth.


Ingredients

  • 1 Rotisserie chicken, meat removed
  • 3 tbsp butter
  • 1 onion, chopped
  • 4 stalks celery chopped
  • 2 large carrots, copped
  • 8 clove garlic, minced
  • 3 thyme sprigs
  • 2 bay leaf sprigs
  • 8 oz egg noodles
  • 6 cups chicken broth or bone broth
  • 1 tbsp lemon juice
  • Salt and pepper for seasoning
  • Fresh parsley


Instructions

  1. In a pot over medium heat, melt 3 tbsp of butter. Add in chopped onions, celery, carrots and garlic and cook down until onions are soft. Celery and carrots may still be a little crunchy and that’s okay. They will cook down in the broth later.Add in garlic and herbs.
  2. Add in fresh thyme and stir until incorporated and fragrant. Pour in broth and drop a couple bay leaves in. Let the broth, veggies and herbs simmer for 10-15 minutes.
  3. Toss in chicken and simmer for a couple more minutes.
  4. Lastly, add in egg noodles and cook until al dente. This should take 5-10 minutes. Note: If you’re not serving immediately, cook egg noodles separately and add to each bowl when your ready to eat.
  5. Serve hot. We recommend topping with fresh parsley and cracker crumbs. Or even serve with a side of bread.
