Brownies seem to get all the attention, but we are here to say that blondies have entered the chat and stolen our hearts! And no we aren’t talking about the singer, we’re talking about the dessert bars!

A blondie is a brownie without the chocolate! To make a blondie, you swap chocolate and cocoa powder in a brownie with vanilla and brown sugar, and the final result is a chewy vanilla dessert bar with a slight caramel flavor. They are simple to make and sooo yummy!

You know we always like to put a twist on our recipes, and with valentines day around the corner, we decided to have some fun and make pink strawberry blondies!! Each soft strawberry white chocolate blondie topped with fresh homemade strawberry buttercream. A homemade strawberry sauce is blended into the blondie batter and strawberry buttercream to ensure every bite has a fresh strawberry flavor.

What is a blondie?

A blondie is essentially a brownie without the chocolate! You swap chocolate for extra vanilla and brown sugar, giving the bars a nutty and caramel flavor. You can be enjoy them plain, or have fun with add ins, like white chocolate chips, butterscotch chips, nuts or flavorings like strawberry! 

The blondie recipe we’re sharing today has a strawberry sauce blended into the batter and white chocolate chips mixed in. Its a delicious treat.

The typical downfall of a blondie is that they can sometimes be too dry. And if you’ve ever had a dry blondie you’ll understand that they aren’t the most delicious to eat. One reason they can turn out this way is because there is not enough moisture added back into the , you have to add more moisture back in with sugar. 

These strawberry white chocolate blondies have the perfect ratio, making them super soft and chewy.

What is a coulis? 

A coulis is a very thin sauce made from fruits or vegetables, where all the pulp, seeds and peels are strained out. A coulis is very easy to make and can be used to add flavor to baked goods, sweets or dishes. 

We prefer to make a coulis when we don’t want chunks of fruit in our baked goods. The strawberry coulis we made for the strawberry white chocolate blondies adds a super fresh strawberry flavor without adding the chunks of fruit to the bars. 

How to make a strawberry coulis for the blondies…

You will want to make your coulis before you make the blondie batter so you can allow time for the coulis to cool. You don’t want to add hot strawberry sauce to your batter. Follow these steps for making you coulis:

  1. First start by mixing together some cornstarch with water in a small bowl. You will add this in at the end to thicken the sauce. Mixing the cornstarch in water before adding it into the coulis to prevent any clumping of the cornstarch when you add it to the hot strawberry sauce.
  2. Next, start cooking down your strawberries with sugar and lemon juice. You will toss the berries, sugar and lemon juice into a saucepan over medium heat. 
  3. As the strawberries cook down, mash them with the back of a wooden spoon and stir frequently. It will start to bubble. If it the mixture gets too hot, slightly decrease the heat so you do not burn the sauce.
  4. Once the mixture is bubbling, mix in the corn starch and cook down for 3-4 minutes. Remove from heat and get ready to strain the coulis.
  5. Place a mesh strainer over a bowl and pour the strawberry coulis into the strainer. Using a wooden spoon, gently press and stir the coulis through the strainer to remove the seeds from the liquid. 
  6. After the coulis is strained, set it aside to cool until you are ready to make your blondie batter.

How to make blondie batter..

It is super easy to make homemade blondies. Follow these steps for making super soft and chewy strawberry white chocolate blondies at home. And the best part is, you don’t need an electric mixer to make them. Just grab a couple bowls and a whisk and you’re ready to go!

Follow these steps for making blondie batter:

Mix together dry ingredients. In a medium bowl, add flour, baking powder and salt. Whisk to combine and set aside. 

Cream butter and sugars. Whisk melted butter and sugars together. You will use a combination of brown and white sugar to make these blondies and they will give them a delicious caramel flavor after baking.

Add in eggs, vanilla and strawberry coulis and stir to combine. The vanilla will give the blondies flavor and the eggs provide moisture and structure to the blondies.

Add in flour and fold the flour mixture into the batter. You want to mix it until it is just combined, careful not to over mix the batter because it could create a dough texture.

How to make homemade strawberry buttercream icing…

This homemade strawberry buttercream is so delicious and pops with a strawberry flavor. It just takes about 5 minutes to make! Here’s what you need to do…

Equipment needed: electric mixer or handheld electric mixer

  1. Cream butter until it is light an fluffy.
  2. Mix in strawberry coulis and vanilla and blend until smooth.
  3. Gradually add in powdered sugar, mixing on low to avoid sugar splattering outside the bowl.

Ingredients

Strawberry Coulis

  • 2 cups strawberries
  • 2 tbsp sugar
  • 1 tbsp lemon juice
  • 1 tbsp water
  • 2 tsp cornstarch

Strawberry White Chocolate Blondie

  • 1 1/2 sticks butter, melted
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 c strawberry coulis
  • 2 c flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 1/2 c white chocolate chips

Strawberry Buttercream Icing

  • 1/2 c strawberry coulis
  • 1 cup butter
  • 2 cup confectioner sugar
  • sprinkles (optional)


Instructions

  1. Start by making the strawberry coulis, because it has to cool to room temperature. In a small bowl, mix water and cornstarch and set aside. In a small sauce pan over medium heat, add remaining lemon juice, strawberries and sugar. As the strawberries heat, smash them with the back of a wooden spoon.
  2. Stir frequently until the strawberry mixture is liquid and bubbling. Mix in the cornstarch mixture and let the mixture cook down for 3 more minutes. Using a mesh strainer, strain the seeds out from the liquid. Set the strawberry coulis to the side to cool.
  3. Preheat your oven to 325°F. Line a 9×9 baking dish with parchment paper.
  4. Make blondie batter. In a large bowl, add flour, baking powder, salt. Mix to combine and set aside.
  5. In a mixing bowl, whisk together melted butter, sugars. Next add in eggs and mix until just combined. Add in vanilla and strawberry coulis.
  6. Next gently fold in your flour mixture and mix until just combined. Careful not to over mix the batter.
  7. Pour batter into prepped baking pan and bake in oven for 45-50 minutes until browned on edges and cooked through. Remove from oven and cool completely on baking rack.
  8. While cooling, make your icing. Using an electric mixer with paddle attachment, beat butter until until it is light and fluffy. Add in remaining strawberry coulis and vanilla and blend until smooth. Gradually add in powdered sugar and mix on low until it icing reaches a smooth consistency.
  9. Spread icing over brownies. Top with sprinkles, slice and enjoy!!
