Peaches and chicken are arguably one of the best summer flavor combos! The blend of sweet, warmed peaches, savory herbed chicken and roasted cherry tomatoes create a delicious summer dish.

Do you constantly crave fruit in the summer like us?! We are always looking for ways to add fruit to our meals in the hotter months because it is so refreshing and hydrating. This skillet herbed chicken with peaches is a delicious blend of summer flavors and has a kick of spices and herbs that make it satisfying for a warm summer night dinner.

We’re swapping the casseroled dish this summer for a cast iron skillet. Skillet dishes have a very similar concept to those casserole dishes your mom always makes for gatherings. Everything is thrown into one dish and cooked in a matter of minutes. And, it’s a super easy way to cook a large dinner. Whether you are cooking for a group of friends or yourself, this skillet dinner is an easy way to make multiple dinner portions all in one pan!

Skillet Herbed Chicken and Peaches

This dish is also packed with flavor in every bite. The herbs and spices add a punch of flavor to the chicken and fruit.

What’s in this Recipe?

Chicken breasts: Chicken is the perfect protein to complement the fruit in this dish. We used 2 large chicken breasts for this recipe and cut them in half. If you have smaller chicken breasts, we recommend adding

Peaches: We used ripe yellow peaches for this recipe. Other peach varieties, like white peaches or donut beaches will work just as well with this dish.

Shallots: Shallots add a rich flavor to this dish. They are sautéed with garlic and ginger at the beginning and create a the yummy sauce that the chicken and peaches roast in.

Heirloom Cherry Tomatoes: We love the color and flavor variety of heirloom cherry tomatoes. They add a variety of color to the dish and a punch of tart flavor that complements well with the sweet fruit.

Chicken Bone Broth: Simmering bone broth with shallots, garlic and ginger creates a flavorful juice to roast the chicken and peaches. Not only does the flavor pair well with this dish, it is also packed with nutrients!

Ginger: Ginger is a key ingredient!! It adds a kick of spice that is unexpected. The key is to add a lot of it so you get a strong punch of spice in each bite.

Lemon Zest: The zest adds a freshness and is a flavor that pairs well with chicken and peaches.

Fresh Thyme: Fresh thyme is one of our favorite herbs to add to chicken dishes.

Skillet Herbed Chicken and Peaches

Ingredients

  • 3 yellow peaches
  • 2 large chicken breasts ((if using smaller chicken breasts, add 3-4))
  • 2 shallots (sliced)
  • 1 cup heirloom cherry tomatoes (halved)
  • 1/4 cup chicken bone broth

Instructions

  1. Preheat oven to 400*F. Warm a cast iron skillet over medium heat on the oven top.
  2. Add 2 tbsp olive oil to the pan. Rub chicken with olive oil and season with lemon zest, salt and pepper. Place chicken breasts in the pan and allow to brown on each side. Cooking on each side for about 6-8 minutes until they are slightly browned.
  3. Remove the chicken breasts from the pan and lower oven-top heat to medium-low heat. Add shallots, garlic and ginger to the pan and sauté for about 5 minutes, until soft.
  4. Add peaches to the pan and sear, sliced side down for a couple minutes, remove from pan.
  5. Pour bone broth in skillet and simmer with shallot, ginger and garlic for about 5 minutes. Turn off stove top heat and add chicken, peaches, sliced cherry tomatoes, sprigs of thyme into the skillet. Lay slices of lemon over the chicken.
  6. Place the skillet in the heated oven and cook for an additional 25 minutes or until chicken is cooked through.
  7. Serve over rice or bed of arugula and a side of sliced french bread.
