Chocolate Chip Ice Cream Sandwiches
Chocolate chip cookie ice cream sandwiches are arguably one of the best treats on a hot summer day! Rich vanilla and chocolate peanut butter Tillamook ice cream is sandwiched between two soft chocolate chip and double choc-chip homemade cookies to make a decadent dessert.
We like to pride ourselves that we KNOW how to make a cookie, but man, were we humbled this week with this recipe. If you stay up to date on our social media, you would have seen the multiple disasters these ice cream sandwiches created! Our goal for our sandwiches was to make a nice soft cookie, and this took some time to figure out.
Our Story Behind The Recipe…
Our morning started with our first batch of cookies running together to form one gigantic cookie. As we were taking the pan out of the oven, the giant fail of a cookie slid right off the pan, landing partially in the oven and partially on the floor. It was an absolute mess that led us to keep asking ourselves, “What did we do wrong?”.
We were annoyed but a little optimistic, because we had enough to make another batch of cookies. The second batch turned out okay, but as we started to sandwich the cookies together and shoot photos, the ice cream became too soft, and was melting all over the place. The pictures were terrible and the melty ice cream sandwiches were a mess!
We scratched the whole batch, went back to the drawing board and recouped a couple days before retrying. In the meantime, we researched different cookie recipes, methods (trust me there has to be a method to these).
We found the best solution for our problem was sticking with our favorite chocolate chip cookie recipe and ordering ice cream sandwich molds from Amazon. The cylinder ice cream molds create the perfect shape for the sandwiches and make the process so much easier!
We are happy to say, round 3 was a success!! The ice cream sandwiches came out looking clean and gorgeous!
The hack to making them look so perfect was to assemble the sandwiches and refreeze them for an hour. The ice cream barely melted and they came out absolutely stunning!
What’s in this Recipe?
All Purpose Flour: All purpose flour flour provided the perfect rise and texture for these cookie ice cream sandwiches.
Brown Sugar and Granulated Sugar: Brown sugar is the key ingredient for adding a caramel flavor to your cookies. The combination of these sugars provides the perfect balance of sweetness and makes a nice chewy cookies
Baking Powder and Soda: Baking powder and soda are used to leaven and spread in the cookies. We tried using baking soda in our initial recipe and it made the dough spread into one large cookie. A combination of the two was perfect.
Butter: It is not traditional to have cold butter in cookies, but the cold cubed butter does the trick in this recipe.
Chocolate chips: We loved using Gherideli bitter sweet chocolate chips. They are a little larger than normal chocolate morsels but perfect size and taste for the best in a chocolate chip cookie.
Cocoa powder: For our double chocolate chip cookies, we added some cocoa powder to increase the chocolate flavor. We thought the double chocolate chip cookie paired perfectly with the chocolate peanut butter ice cream.

Ingredients
Chocolate Chip Cookies
- 1 1/2 cup flour
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 stick cold butter, cut into 1/2 inch cubes
- 1 cup chocolate chips
- 1 egg, room temp
- 1/2 tsp vanilla
Double Chocolate Chip Cookies
- 1 1/2 cup flour
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 tbsp cocoa powder
- 1 stick cold butter, cut into 1/2 inch cubes
- 1 cup chocolate chips
- 1 egg, room temp
- 1/2 tsp vanilla
Ice Cream Center
- 1 or 2 half gallon tubs of your favorite ice cream
Instructions
Ice Cream Center
- At least 2 hours before you assemble your ice cream sandwiches, add softened ice cream to your silicone ice cream molds. We used Tillamook vanilla ice cream and Tillamook chocolate peanut butter ice cream for our sandwiches.
- Cover the silicone molds with layer of parchment paper to smooth the tops and then wrap a piece of foil over the top of the mold.
Chocolate Chip Cookies
- Preheat oven to 375 F. In an electric mixer bowl, combine flour, brown sugar, sugar, baking powder, baking soda, and salt. Add cubed butter to flour mixture and mix until somewhat combined (the butter should be in pea-sized clumps).
- Add chocolate chips and mix until combined. Add the egg and vanilla and beat just until the dough has formed and it’s coming off the edges of the bowl into a ball.
- Using a mini ice cream scoop, scoop cookie dough balls onto prepared baking sheet about 2 inches apart. Freeze dough for 15 minutes.
- Bake cookies for 7 minutes, turn the cookie tray to cook the other side and lower the temperature to 350 F. Bake the cookies for 8 more minutes. Transfer baking sheet to a wire rack to cool completely.
Double Chocolate Chip Cookies
- To make the double chocolate chip cookies, follow the same steps above, but add 2 tbsp of cocoa powder to the flour, sugar, baking soda, baking powder, and salt mixture.
Assemble Ice Cream Sandwiches
- Match cookies of like sizes with one another. Release ice cream from the molds and place in between two chocolate chip cookies.
- We paired regular chocolate chip cookies with vanilla ice cream and double chocolate chip cookies with the chocolate peanut butter cookies.
- Roll the edges of the ice cream sandwich in sprinkles, mini chocolate chips, nuts or some of your other favorite toppings.
- Enjoy right after assembling or wrap each ice cream sandwich in plastic wrap and store in an air tight container in your freezer.
