This spiced gingerbread latte is the perfect cozy drink for the holiday season! Made with espresso, gingerbread syrup, oat milk and topped with whipped cream.
The holiday season has crept up on us pretty quickly this year, and with it, so has our excitement for all the holiday treats! One of our favorite drink from Starbucks past holiday menu is the Gingerbread Latte (RIP).
Since we can’t get our hands on one any longer, we decided to try and make our own. Not only does this gingerbread latte taste better than the Starbucks version, but it’s also way cheaper.
To make this recipe full of all the spiced gingerbread flavor we love, we made our own gingerbread simple syrup to add to the latte. It literally took us 15 minutes to make and made enough syrup for a couple of weeks worth of lattes!

What’s in this recipe?
Gingerbread Syrup: This spiced gingerbread syrup is absolutely delightful! It has all the delicious spiced ginger flavor that makes a gingerbread cookie.
Espresso: We added two espresso shots to this spiced gingerbread latte, but you can add more or less to make it exactly how you want it. If you don’t have an espresso machine at home, you can substitute espresso for 1/2 cup of strong coffee.
Oat Milk: We love using oat milk in holiday drinks to make them taste super creamy and decadent. However, you can use your favorite type of milk.
Whipped Cream: To make this spiced gingerbread latte taste similar to Starbucks, a bit of whipped cream on top takes this to the next level!
How to Make the Spiced Gingerbread Latte
Make the Gingerbread Simple Syrup…
This gingerbread latte is so simple to make, and we can’t get over how perfect it is for the holiday season!
To start, you’ll want to make the gingerbread syrup. This is actually super simple to make and takes literally 5 minutes to prepare and about 15 to cool!
First, you’ll want to add all the ingredients, besides the vanilla, into a medium sauce pan. Bring all the ingredients to boil and allow the sugars to completely dissolve. You want to make sure you’re stirring the ingredients as it comes to a boil.
Once the mixture comes to a boil, remove the pot from the heat and allow the mixture to steep and cool for 15 minutes. Then, using a fine strainer, separate the spices form the liquid.
We like to store our syrups in mason jars, but you can use any airtight container you like!

Make the Gingerbread Latte…
Now, this is the fun part! Once your syrup is made and ready to go, it’s time to make the spiced gingerbread latte.
Start by adding two to four tablespoons of syrup to a mug. Brew your 2 shots of espresso into a mug (check out our list favorite espresso machines here) and steam your choice of milk. Add the steamed milk to the espresso mixture and top with whipped cream, cinnamon or a few sprinkles of brown sugar.
Lastly, enjoy with your favorite pastry or treat! We love drinking this a dunking some biscotti or gingerbread cookie.

Ingredients
Gingerbread Simple Syrup
- 1 cup water
- 1/2 cup brown sugar
- 1/4 cup white sugar
- 1/4 cup molasses
- 1/4 cup ginger (peeled and chopped)
- 1 tsp cinnamon
- 1 tsp whole cloves
- 1/2 tsp all spice
- 1 tsp vanilla
Spiced Gingerbread Latte Recipe
- 2 shots espresso (or 1/2 cup strong coffee)
- 2–4 tbsp gingerbread syrup
- 8 oz oat milk
- whipped cream or cinnamon (for topping)
Instructions
Gingerbread Simple Syrup
- Add water, brown sugar, white sugar, molasses, ginger, cinnamon, cloves, and all spice in a pot and bring to a boil. Stirring as the sugar dissolves. Once it’s boiling and the sugar has dissolved, remove from heat and stir in the vanilla.
- Let the syrup steep for 15 minutes. Using a fine strainer, strain the syrup from the whole spices.
- Transfer the syrup to a jar and enjoy in a hot latte or vanilla tea.
Spiced Gingerbread Latte Recipe
- Add simple syrup to a mug. Brew your fresh espresso shots into the mug. Steam your choice of milk and add to the espresso.
