Get in the spirit for St. Patrick’s Day with a festive breakfast. We are serving up Luck of the Irish Shamrock Egg in Toast. It is our St. Patricks day twist on an Egg in a Hole and avocado toast!

Ever heard of an egg-in-a-hole? It sounds kind of strange, I know but it is actually one of the easiest and most fun ways to make an egg and toast. Minimal kitchen skills and ingredients are needed with this recipe!!

All you need is a skillet, your favorite bread and an egg. You just cut out a hole in a slice of your favorite bread and crack an egg in the hole. Nothing is wasted because the portion of the bread cut-out is buttered and toasted in the pan as well. If you have kids, this is such a fun way to get the kids in the holiday spirit. We also love making eggs-in-a-hole when we have friends in town because this recipe is so convenient.

This recipe is a festive holiday twist on the normal egg-in-a-hole! We introduce to you the Luck of the Irish Shamrock Egg in Toast! All you need to make this breakfast festive is a shamrock shaped cookie cutter!

This recipe wouldn’t be complete without some green! To top, we added some mashed avocado to the top and seasoned with everything but the bagel seasoning. YUM! Keep reading for more details on how to make the Luck of the Irish Shamrock Egg in Toast.

Using your shamrock cookie cutter, cut out a shamrock-shaped hole in the center of the slice of bread and remove.

Putter a skillet and the two pieces of toast and place on the skillet. Crack your egg in the hole and wait for it to cook almost all the way through until flipping. The bread should start to brown a little bit as well.

Once your egg and toast are cooked, remove from the skillet. Make the toast festive for St. Patrick’s day, serve topped with mashed avocado.

A festive take on and egg-in-a-hole meets avocado toast for this St. Patrick's day Shamrock breakfast! Toasted bread with an egg in the center, topped with mashed avocado. YUM!

Ingredients

Scale
  • 1 slice Ezekiel bread ((or your favorite type of bread))
  • 1 tsbp butter
  • 1 egg
  • 1/2 avocado (mashed)
  • everything but the bagel seasoning

Instructions

  1. Heat the frying pan up to medium heat and melt 1 tbs of butter in the pan. While the pan is heating up, prepare the toast.
  2. To prepare your piece of toast, use the shamrock cookie cutter to cut a shamrock shaped hole in your piece of bread. Remove the cut out from the bread (you can toast this piece as well).
  3. Place both pieces of the bread in the frying pan. Crack the egg into the shamrock hole.
  4. Once the one side of the egg is cooked through, flip your piece of bread to cook the other side of the egg and toast the bread as well.
  5. Once your egg and toast are cooked to your preference, plate the toast. This is when you can add avocado. We like to top our toast with salt, pepper, Everything But the Bagel Seasoning from Trader Joes, and crushed red pepper.
