London’s calling…and they want their pie back!

If we could wrap up all the flavors that remind us of our travels to England and put them in a pie, it would be this Citrus Cream Pie with Earl Whipped Cream. The sweet graham cracker crust reminds us of the biscuits we ate while we were in London, and the whipped cream is infused with earl grey tea, which was something we couldn’t drink enough of while we were there.

The flavor profile of this pie is truly so delicious and such an experience! The citrus flavors combined with the sweet creaminess of the filling and the deep flavor of the tea is EVERYTHING!

With spring and summer right around the corner, this pie would be the perfect choice for a casual dinner party, Easter holiday or as a delicious treat for a neighbor!

What’s in the recipe?

Graham Cracker Crust:

Graham Crackers: A graham cracker crust is a classic shell to hold pies. We love how it gives it adds texture and delicious warm flavor to this pie.

Sugar: Sugar is added to sweeten the pie crust.

Brown Sugar: Brown sugar is added for sweetness, but also to add a richer caramelized taste to the graham cracker crust.

Butter: We love using high quality butter in desserts. Our go-to is Kerigold butter! It adds such a delicious flavor to recipes.

Citrus Cream Pie Filling:

Gelatin: The gelatin makes the cream pie filling hold together, because there are so many liquid components, it’s essential.

Cold Water: The cold water is mixed with the gelatin to activate it and solidify it.

Cream Cheese: We absolutely love the addition of cream cheese to this cream pie filling. It adds a delicious tang and creaminess to the citrus filling.

Sugar: Sugar is added to sweeten the filling.

Heavy Whipping Cream: Heavy whipping cream adds a creamy flavor to the filling.

Vanilla Extract: Vanilla extract is added to the filling for flavor and pairs beautifully with the orange flavor in the pies as well.

Orange Juice: The addition of orange juice tastes this filling up a notch. It gives a bold, orange flavor that pairs perfectly with the earl grey whipped cream.

Orange Zest: The zest of one orange is added to the cream pie filling to enhance the orange flavor.

Salt: A bit of salt is added to the filling to offset the sweetness of the filling.

Early Grey Whipped Cream:

Heavy Whipping Cream: Heavy whipping cream is necessary for a delicious whipped cream topping. When whisked at a high speed, air is whipped into it creating a fluffy whipped cream.

Earl Grey Tea: We infused earl grey whipped cream into the topping and it adds the MOST delicious flavor. We are obsessed with earl grey whipped cream now! The Harney & Sons Earl Grey Tea is seriously the BEST!

Powdered Sugar: The powdered sugar adds a delicious sweet flavor to the whipped cream and creates a gorgeous light texture as well.

Pistachios: We added crushed pistachios to the top of the pie, because they pair so well with orange and earl grey flavors. Plus, they add a delicious crunch and texture.

The Details

Even though this pie may sound complicated, it’s actually a simple pie to assemble. We love making cream pies, because they are easy to whip up and we prefer the texture of them more than other pies.

The Earl Grey Whipped Cream…

To start, we suggest making the earl grey whipped cream. When we were testing this recipe we tried a couple of different methods to infuse the flavor into the whipped cream. We’re sharing which method gave us the best results and we were surprised by the one we chose.

The Cold Method:

We initially tested this pie out with the “cold method”. How this works is you infuse the whipped cream with the earl grey tea and let it sit in the fridge over night. It’s super similar to making cold brew coffee. 

Although this method worked, it took way more time (8-12hours), and the flavor of the whipped cream didn’t come out as strong as we would have liked.

The Hot Method:

The hot method is what we highly suggest! Not only is it quicker, but it provides a stronger flavor to the whipped cream which made it exactly what we wanted!

All you have to do is heat the cream, steep the tea bags for 5 minutes in the cream, and let it cool. SO simple and SO delicious!

Graham Cracker Crust…

Then, you’ll want to make the graham cracker crust. All you have to do is combine the ingredients, press them down in a pie dish a bake for 10 minutes until golden brown.

Citrus Cream Filling

To make the cream filling, you’ll want to activate the gelatin in cold water. Then you’ll mix the rest of the filling ingredients together until the filling is smooth and combined.

The last step is assembling the pie. Then, fill the graham cracker crust with the citrus cream filling, let is set for a few hours and then top with the earl grey whipped cream and crushed pistachios. 

This is seriously such a delicious pie that gives us a little piece of England in the States. The flavors are so delicious for spring and summer too!

Ingredients

Graham Cracker Crust:

  • 1 1/2 sleeves graham crackers (crushed into crumbs)
  • 2 tbsp sugar
  • 1 tbsp brown sugar
  • 6 tbsp butter (melted)

Citrus Cream Pie Filling:

  • 1 envelope unflavored gelatin
  • 1/4 cup cold water
  • 2 pkg cream cheese
  • 1/2 cup sugar
  • 2 cups heavy whipping cream
  • 2 tsp vanilla
  • 3/4 cups orange juice
  • zest of an orange
  • 1/2 tsp salt

Earl Grey Whipped Cream:

  • 1 cup heavy whipping cream
  • 2 bags earl grey tea
  • 1/4 cup powdered sugar
  • 1 tsp vanilla

Toppings:

  • crushed pistachios


Instructions

Earl Grey Whipped Cream:

  1. Place two earl grey tea bags in a mason jar. Heat the whipped cream in a small sauce pan until hot. Transfer the hot cream to the mason jar—pouring over the tea bags. Let the tea steep for 5 minutes. Press the tea bags, straining the excess cream and flavor. Cover with the lid and place in fridge to cool.
  2. Once the whipped cream is cool, add the earl grey infused cream and powdered sugar to the bowl of a stand mixer. Using the risk attachment, whisk on high until fluffy and stiff peaks form. Whisk in the vanilla flavor until combined. Place in the fridge for later.

Graham Cracker Crust:

  1. Preheat oven to 350°F. Combine crushed graham crackers 2 tbsp sugar, brown sugar and melted butter in a bowl. Mix until well blended.
  2. Press the graham cracker mixture into the bottom of the pie pan. Bake for 10-12 minutes. Allow the pie crust to cool as you make the filling and whipped cream.

Citrus Cream Pie Filling:

  1. Add 1/4 cup of cold water to a small bowl. Sprinkle the gelatin over the water and let it stand for 5 minutes. In a medium mixing bowl, beat cream cheese and 1/2 cup sugar until smooth. Next, microwave the gelatin for 10 seconds and beat into the cream cheese mixture. Beat in the heavy cream, vanilla, orange juice, orange zest and salt into the mixture.
  2. Transfer the filling to the pie crust and let it chill in the fridge for 3 hours. After the filling has solidified, top with the earl grey whipped cream. Add crushed pistachios on top of the whipped cream. Serve and enjoy!
