It’s officially spring, so we’re kicking of the season with this delicious carrot cake coffee cake! With the weather warming up, and Easter on the way, we are always inspired by the delicious, fresh flavors of spring.
One of our favorite childhood memories during this time of year was waking up to our mom’s carrot cake for breakfast. It seriously hits the spot every. single. time. Thinking of those times inspired us to create a delicious twist on a classic carrot cake.
The flavors of traditional coffee cake and carrot cake pair so beautifully together, so it only seemed natural to combine the two—creating the most delicious carrot cake coffee cake with cream cheese filling.
In every bite, you get the tender carrot cake, the tangy cream cheese filling and the sweet cinnamon sugar topping. Pair this dessert with a hot cappuccino or breakfast tea and you’ve got a delicious spring-time breakfast!

This coffee cake is super simple to make! It’s such an easy spring breakfast to whip up for friends and family on a weekend or Easter brunch.
To start, you’ll want to preheat your oven and prepare your baking dish. We love using a 9 x 13 baking dish for coffee cake so that we can serve a crowd of people.
Then, mix up the cinnamon sugar topping. It’s basically like a cross between a crumble and a crunchy cinnamon coating. It adds a unique and delicious texture to the coffee cake.
Before making the batter for the coffee cake, we also recommend grating the carrots first. This gets the “hard work” out of the way so you can easily add it to the mixture.
Next, mix up the batter. It’s a traditional coffee cake base with greek yogurt to make it super moist, golden raisins for flavor and texture and grated carrots.
Once the batter is ready to go, it’s time to assemble the carrot cake! Add half the batter to the prepared baking dish, and then add spoonfuls of melted cream cheese on top. Using the end of a knife, swirl the cream cheese into the batter. Then sprinkle half of the cinnamon sugar mixture on top of the cream cheese. Lastly, add the remaining batter on top and sprinkle the remaining cinnamon sugar topping over the batter.
Finally, bake the coffee cake and serve to friends and family or enjoy with roommates on a cozy spring morning.

Ingredients
- 2 cups all purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup butter (room temp)
- 3/4 cup sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 5.3 oz pkg greek yogurt
- 2 tbsp milk
- 1 tsp vanilla
- 1/2 cup golden raisins
- 6 medium carrots (peeled and grated)
- 8 oz cream cheese (melted)
Cinnamon Sugar Crumble
- 1/2 cup brown sugar
- 1/2 cup sugar
- 1/4 cup flour
- 1/2 tsp salt
- 1 tbsp cinnamon
- 4 tbsp butter (melted)
Instructions
- Preheat oven to 350°F. Lightly grease a 9 x 13 inch pan with butter and line with parchment paper.
- To make the cinnamon sugar crumble, in a small mixing bowl, combine brown sugar, sugar, flour, cinnamon, and butter. Set aside for later.
- In a medium size mixing bowl, combine flour, baking powder, baking soda, cinnamon, and salt. Set aside for later.
- In a stand mixer bowl, cream butter, brown sugar and sugar together until combined. Add eggs, one at a time. Then add greek yogurt and vanilla, mix until combined.
- Gradually mix in the flour mixture until just combined. Then beat in the milk. Next, add golden raisins and grated carrots.
- Pour 1/2 the batter in the prepared pan. Add spoonfuls of cream cheese on on top of the bater. Sprinkle half of the cinnamon streusel over the cream cheese. Pour the rest of the batter over the top. Top with the remaining cinnamon streusel.
- Bake for 40-45 minutes or until the cake is cooked through. Allow the carrot cake coffee cake to cool for 15 minutes before serving.
