Birthday Cake Cookie Bars. A dessert bar with a layer of Oreo cookie crust, funfetti cookie and topped with vanilla cream cheese and sprinkle of confetti sprinkles.
Our 26th birthday next week, so we thought it would be fun to create a celebratory dessert that is reminiscent of our childhood. After all…we live for good nostalgic moments.
Growing up in Texas in the late 90s and early 2000s, nearly every birthday party we went to served Blue Bell Birthday Cake Ice Cream cups. It’s one of Blue Bell’s BEST flavors, but you can only buy it in the small cups. If you’ve never had it before, it’s a vanilla ice cream swirled with chocolate cake, chocolate sauce, and confetti sprinkles.
We wanted to pack all these flavors into one dessert bar, which lead to us crating the birthday cake cookie bars. The combination of the Oreo cookie crust, confetti cookie and vanilla icing bring back that nostalgic flavor from childhood!

How to Make the Bars…
Step 1: Make the Funfetti Cookie Dough
Although it may seem that we’re skipping the process of making the Oreo layer first, we recommend making the funfetti cookie dough, so it can chill for a little bit.
First mix the dry ingredients together and set aside. In a stand mixer cream the butter and sugar. Then, add eggs and vanilla. Once combined add your dry ingredients to the stand mixer and combine. Pour the colorful sprinkles into the dough and stir on medium speed until mixed in.
Cover the dough in plastic wrap and place in the fridge to chill while you’re making the Oreo crust.
Step 2: Make the Oreo Cookie Crust
This part is super simple and only had two ingredients…butter and Oreo cookies.
To make the crust, add Oreos to a plastic bag and crust with a rolling pin until the cookies are a fine crumble. **PRO TIP: You can totally use a food processor to crust the Oreos, but we hate cleaning food processors, so went the old fashioned way!
Mix the melted butter and crushed Oreos in a bowl until combined.
Step 3: Layer and Bake
The next step is to make the layers and bake! Press the Oreo cookie layer into the bottom of your baking dish, and add the cookie dough on top. Then, bake in the over for 40-45 minutes.
Step 4: Chill and Add the Frosting
Once the bars are done baking, allow them to cool completely before adding the frosting.
We totally “cheated” by adding the canned frosting, but let’s be real, it’s actually pretty delicious! Lastly, top with some colorful sprinkles, cut into squares and enjoy!

Birthday Cake Cookie Bars

Ingredients
Oreo Cookie Layer
- 30 Oreo cookies
- 6 tbsp butter (melted)
Funfetti Cookie Layer
- 3 cups flour
- 1 tsp baking powder
- 2 sticks butter (cold, cubed)
- 3/4 cup brown sugar
- 1/4 cup white sugar
- 2 eggs
- 1 tsp vanilla
- 1 cup funfetti sprinkles
- 1 can store-bought vanilla cream cheese frosting
Instructions
Funfetti Cookie Layer
- Preheat oven to 375°F. Butter and line pan with parchment paper.
- In a medium bowl, whisk together flour, salt, and baking powder. Set aside for later.
- Cube the 2 sticks of butter, toss them in your stand mixer and cream your butter on LOW speed, until it's a whipped texture.
- Then add the brown sugar and white sugar to the butter. Cream together on MEDIUM speed until blended together.
- Then, add the eggs and vanilla extract. Mix on MEDIUM speed until combined. Add your flour mixture 1/3 at a time, until fully combined. Then mix in your sprinkles.
- Transfer cookie dough onto plastic wrap, seal and place in the fridge to cool while you make the Oreo cookie layer.
Oreo Cookie Layer
- Add the Oreo cookies to a large plastic bag, seal and crush the cookies into a fine cookie dust with a rolling pin. **PRO TIP: You can totally use a food processor to do this as well.
- In a small bowl, add the Oreo Cookie crumbles and the melted butter. Mix until incorporated.
Assemble the Bars
- Press the Oreo Cookie crumbles into the bottom of the prepared baking pan. remove the cookie dough from the fridge, and press and spread the dough on top of the Oreo Layer.
- Bake the bars in the oven for 40-45 minutes. Once done baking, remove and allow to cool to room temperature before adding the frosting. Add a layer of frosting and some colorful sprinkles to the top.
- Cut the bars into squares and enjoy!
