When we think of football season snacks, hamburger sliders are at the top of our list. They’re so easy to make and serve to a crowd. 

In our house, when a game is on (preferably the Dallas Cowboys), we love to have something to make it a special occasion. It’s always good to have simple grab-and-go snacks to graze on during commercial breaks. 

The spicy curry ketchup on these sliders elevates the flavor makes these game day sliders stand out from your traditional burger. You and your guests will keep coming back for more!

What’s in this recipe?

Mini brioche buns: We love the flavor and elegant look of brioche buns. They elevate the taste of these mini sliders and make them feel a bit more fancy.

Ground Beef: We love using grass-fed beef. It has a more delicious flavor and is healthier for you too.

Green Goddess Seasoning and Cumin: The green goddess seasoning from Trader Joes is such a great seasoning to add to any meat. It adds some tang and spice to the ground beef. The cumin adds some depth and warmth to the meat as well.

Cayenne: Cayenne is used in the ground beef and spicy curry ketchup. It adds a nice kick to the slider.

Salt & Pepper: We always add a bit of salt and pepper to flavor the meat.

Cheddar Cheese: We love the classic taste of cheddar cheese on our sliders, but you can use shite cheddar, provolone, pepper jack or any other flavor of cheese. To make the cheese the appropriate size for the sliders, we cut the cheese slices into quarters.

Ketchup: A delicious store-bought ketchup is perfect for making the curry ketchup. Our favorite is the Wataburger Ketchup. 

Curry Spice: The curry adds a delicious warm, spicy flavor to the spicy game day sliders.

Iceberg Lettuce: Iceberg lettuce adds a fresh crunch to the sliders.

Purple Onion: We love the flavor of purple onion. It adds a delicious crunch.

How to Make the Spicy Game Day Sliders:

These spicy game day sliders are super simple to make and assemble before your family and friends come over to watch the game.

Start by heating a cast iron griddle (we love this one that rests on your stove top). While the griddle heats, add ground beef, green goddess seasoning and cayenne to a bowl Mix with your hands to combine. Make ten to twelve 3-inch patties.

On the hot griddle, cook the beef patties until the internal temperature is 165°F. Immediately after you take the sliders off the griddle, place a small piece of sliced cheese over the top to melt.

To make the curry ketchup, combine ketchup, curry powder and cayenne to a small mixing bowl. Using a spoon, stir the mixture until the spices are fully combined.

Once the hamburger patties are cooked, you can use the same griddle to toast the buns. This step isn’t necessary, but it adds a delicious flavor and looks gorgeous as well. We toast the buns face down until there are definite grill marks on them. This should take about 1-2 minutes for each bun.

Time to Assemble the Sliders

Not it’s time to assemble the spicy game day sliders! This is the fun part! To prep the different toppings, cut the iceberg lettuce into small enough pieces for the sliders and slice the purple onion.

Start by spreading the curry ketchup on the bottom bun, add the mini hamburger patty, place a piece of iceberg lettuce and onion, and top with the other half of the brioche bun. Lastly, we used mini skewers to hold the layers of the sliders together. 

Continue assembling the sliders until you’ve made all of them. We love serving skewers on a wooden board (like this one). It’s such a fun and beautiful way to display them for game day.

Ingredients

  • 1 tsp cumin
  • 1 tsp green goddess seasoning
  • 1/2 tsp cayenne
  • salt and pepper
  • cheddar cheese slices (quartered)
  • 1 pkg brioche rolls

Spicy Curry Ketchup

  • 1/2 cup ketchup
  • 1 tsp curry powder
  • 1/2 tsp cayenne
  • 1/2 tsp paprika

Slider Toppings

  • sliced onion
  • iceberg lettuce
  • pickles
  • tomatoes

Instructions

Make the Mini Hamburger Patties

  1. To make the curry ketchup, combine ketchup, curry powder and cayenne to a small mixing bowl. Using a spoon, stir the mixture until the spices are fully combined.

Assemble the Game Day Sliders

  1. To prep the different toppings, cut the iceberg lettuce into small enough pieces for the sliders and slice the purple onion.
  2. Start by spreading the curry ketchup on the bottom bun, add the mini hamburger patty, place a piece of iceberg lettuce and onion, and top with the other half of the brioche bun. Skewer the slider together with a small party skewer.
  3. Continue assembling the sliders until you’ve made all of them. Enjoy these sliders with a chips and dip and delicious bite-size dessert.
