Spicy Dumpling Salad
- 15–20 frozen dumplings
- 2 cups chopped Napa (green) cabbage
- 1 cup edamame, frozen
- 1/2 cup cilantro, chopped
- 1 cup chopped carrots
- 3 green onions
- 1 red pepper, thinly sliced
- 1/4 cup chopped roasted peanuts
Chili sauce
- 1/4 cup olive oil or other neutral oil
- 3 cloves garlic, minced
- 1 tbsp chili flakes
- 3 tbsp soy sauce
- 2 tbsp Rice vinegar
- 1 tbsp Sesame oil
- 1 tbsp honey
Instructions
- Prep salad veggies. Chop cabbage, green onions, red pepper, and cilantro. Cook edamame (if uncooked or frozen).
- Steam frozen dumplings. Heat a skillet over medium heat; add a couple of tablespoons of oil to the pan. Pan-fry dumplings until crisp on the bottom; add some water to the skillet, cover, and cook until cooked through.
- Make chili sauce. In a bowl, stir together minced garlic, soy sauce, chili flakes, rice vinegar, sesame oil, and honey. Heat 1/4 cup of olive oil until hot. Pour the oil into the bowl with the chili sauce ingredients and stir until evenly combined. The hot oil will help to meld the flavors together.
- Assemble the salad. Start with a bed of cabbage, cilantro, carrots, green onions, and red pepper. Top with dumplings, a drizzle of chili sauce, peanuts, sesame seeds, and extra cilantro.
