Spicy Blackened Salmon with Roasted Tangy Lemon Garlic Asparagus

You don’t need to be super skilled in the kitchen to make an impressive and delicious dish! Blackened salmon and roasted veggies is a quick and easy recipe that is great for a date night or if you are just wanting a delicious dinner at home.

Each fish fillets is generously rubbed with a spicy and smokey spice blend and pan seared to make a flavorful blackened crust. Salmon pairs really well with any green veggie but one of our favorites complements is this roasted asparagus. The roasted asparagus is lightly seasoned with lemon and garlic to create this light and healthy dinner.

We love having a fish dinner at least once a week because it is so easy to make and versatile! Whether it is seasoned, breaded or crusted there really is not a way you can go wrong when cooking fish fillets. This blackened salmon is one of our favorite ways to cook salmon because not only does it taste delicious, it looks very impressive and elegant on a plate!

What’s in this recipe?

Salmon fillets: We prefer getting fresh instead of frozen because it has a better flavor and there is no thawing involved before cooking. For this dish, you will just need a one pound fillet or about four portions.

Asparagus Spears: We love roasted asparagus and think it complements fish so well! And it doesn’t take much to enhance the natural flavor. In this recipe some lemon and a couple spices seemed to do the trick!

Blackened salmon spice blend: Our blackened salmon spice blend is a mix smokey and spicy flavors to form the beautiful blackened crust on the top of each fillet. All you need is some smoked paprika, garlic powder, onion powder, cayenne and red pepper flakes.

Olive Oil: The type of olive oil you use is important to achieve a good taste. We always use extra virgin olive oil when cooking. It is probably our most used oil in the kitchen because it is so versatile. We used it as the fat to cook both the salmon and to roast the vegetables.

Greek Yogurt: We plated our spicy blackened salmon and asparagus with a greek yogurt dip. It is creamy and tangy and great for dipping salmon and asparagus.

Lemons: Use lemons to garnish and add a punch of zesty flavor to your asparagus. If you opt to make a greek yogurt sauce, you will also add some lemon zest there as well.

Garlic: Garlic adds a nice spicy taste to the greek yogurt dip and helps to make it taste more savory flavor to the yogurt. It doesn’t take much for this dip since fresh minced garlic has such a strong flavor.

Salt and pepper: Optional but added for seasoning to taste in all the components of the dish!

How to Perfectly Blacken Salmon

Blackening salmon makes the fish fillets look very elegant but it not complicated at all!! All you need are your fillets, some olive oil and some basic seasonings that you probably already have in your pantry.

Start by warming your skillet on medium-low heat while you prepare your salmon and spice mixture. In a small bowl, measure out your seasoning and mix to combine all the spices together. Next, drizzle salmon fillets with olive oil and spread to cover the surface sprinkle with seasoning mixture. 

Once your fillet is coated with rub, place your fillet in the pan face down. The shiny grey scales of the fish should be facing you. Cook the fillets until the salmon has blackened and formed a crust. This step should take about about 5-8 minutes.

Once blackened, flip salmon fillet over to the other side and cook until internal temperature reaches 145oF. Once it reached internal temperature, remove from heat and let cool for a couple minutes. It is best served hot with roasted asparagus and our zesty greek yogurt sauce.

Ingredients

Spicy Blackened Salmon

  • 1 lb salmon fillets
  • 1 Tbsp extra virgin olive oil
  • 1 tbsp smoked paprika
  • 1/2 tbsp onion powder
  • 1/2 tbsp garlic powder
  • 1 tsp cayenne
  • 1 tsp red pepper flakes
  • salt (to season)

Roasted Tangy Lemon Garlic Asparagus

  • 1 bunch fresh asparagus spears
  • 1/4 cup extra virgin olive oil
  • 2 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp pepper

Zesty Greek Yogurt Sauce

  • 1 cup greek yogurt or skyr
  • 1 tbsp lemon zest
  • 1 garlic clove (minced)
  • 1 tsp onion powder
  • salt and pepper (to season)
  • olive oil (to drizzle)

Instructions

  1. Start by preheating your oven to 425°F to roast the asparagus. Line a rimmed baking sheet with aluminum foil and spread your asparagus on the sheet pan. Drizzle with olive oil, onion powder, garlic powder, salt, pepper and red pepper flakes. Rub seasonings and oil into the asparagus to make sure all the spears are coated. 
  2. Place in oven and roast for 20-25 minutes. 
  3. While the asparagus is cooking, Start making your salmon fillets. Warm your skillet over medium-low heat for a couple minutes while you prep your salmon. In a small bowl, measure out your seasoning and mix to combine. Drizzle salmon fillets with olive oil and spread to cover the surface sprinkle with seasoning mixture. 
  4. Place your fillet in the pan face down (fish scales should be facing you). Cook until the salmon has blackened, about 5-8 minutes. Once blackened, flip salmon fillet over to the other side and cook until internal temperature reaches 145°F. Once it reached internal temperature, remove from heat. 
  5. The asparagus and salmon should be done around the same time. Let asparagus cool on the pan for several minutes before serving. 
  6. Plate with zesty greek yogurt sauce, asparagus spears and salmon fillet! This dish also pairs well with roasted baby potatoes!
