Skillet Cranberry Orange Crisp Pie with Vanilla Bean Ice Cream. Made with buttery, oat crust, filled with a tart and bubbly cranberry filling and topped with brown sugar crumble and a scoop of creamy vanilla bean ice cream.

It’s finally cranberry season, and we are so excited! Cranberries are one of our most favorite fruits this time of year. We could probably eat homemade cranberry sauce for breakfast lunch and dinner, because we constantly crave it as the cold weather moves in.

Fruit crisps are always such an easy dessert to make for a crowd and almost everyone loves them! 

This year, we wanted to create a sweet, and slightly tart cranberry dessert that could be served for Thanksgiving or throughout the rest of the winter season. Our favorite part of a pie or fruit crisp is the buttery crust or crumble on top so we doubled down and added a crust to the bottom of the skillet.

Trust us, you and your guests will absolutely love this recipe. It has all the delicious flavors of winter combined into a comforting, soul warming dessert!

What’s in this recipe?

Oats: Oats are in the crust and the crumble and add a delicious, hearty flavor that pairs so well with the butter and brown sugar.

Flour: Flour helps to thicken the crust and cranberry filling.

Brown Sugar: Brown sugar adds a deep, delicious sweetness to this dessert.

Salt: Adding a bit of salt to every dessert helps to offset the sweetness and enhance the flavor of the dessert.

Cold Butter: We added cold butter to the crust and streusel to make them slightly crispy.

Fresh Cranberries: We love using fresh cranberries in recipes, but you can use frozen cranberries as well!

Orange: We added orange juice and the zest of one orange to the filling. Cranberries and orange pair so beautifully together and are quintessential flavors for the holiday season.

Vanilla: Vanilla adds another dimension of flavor to the filling.

Cinnamon: We love cinnamon and love adding it almost every recipe in the fall or winter, because it’s such a delicious, sweet, warm spice.

Nutmeg: Nutmeg pairs so beautifully with cinnamon and has a bit of a deeper, toaster flavor than cinnamon.

How to Make the Cranberry Orange Crisp Pie

This Cranberry Orange Crisp Pie is super simple to make and is the most delicious holiday dessert to bring to a gathering with friends, families or coworkers.

To start, you’ll want to preheat your oven to 375Β°F and lightly grease the bottom and sides of a cast iron skillet (this is the one we used).

Make the Crust…

Next, in a medium size bowl (check out our favorite mixing bowls here), ground oats (we blended ours in a Nutribullet, but you can used a food processor as well), flour, brown sugar, cinnamon and salt.

Using a pastry cutter, cut in the butter to the flour mixture. Once the butter is broken up a bit, we used our hands to form more solid clumps and incorporate the remaining loose flour. Press the mixture into the bottom of the skillet and bake int he oven for 15 minutes. Your crust should be slightly brown around the edges.

Once you remove the crust from the oven, allow for it to cool completely and lower the oven temperature to 350Β°F.

The Cranberry Orange Filling…

In a medium size mixing bowl, combine the fresh cranberries, orange juice, orange zest, brown sugar, flour, vanilla, cinnamon, nutmeg and salt. You want to coat all the cranberries in the sugar orange mixture and then set it aside for later.

The Brown Sugar CrumbleΒ 

Then, in a small mixing bowl, combine flour, brown sugar, oats, cinnamon, and cold butter using your hands. Once the mixture forms into a crumble texture, sprinkle it over the top of the filling.

Bake the cranberry orange crisp pie for 40-50 minutes, or until the cranberries are juicy and bubbly. 

We highly recommend serving this dessert with a delicious scoop of vanilla bean ice cream on top. It’s seriously so yummy! You’ll be going back for seconds!

Ingredients

Oat Crust:

  • 1 cup oats (ground)
  • 1/3 cup flour
  • 1/3 cup brown sugar
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/3 cup cold butter

Cranberry Orange Filling:

  • 12 oz fresh cranberries
  • zest of 1 orange
  • 4 tbsp orange juice
  • 1 cup brown sugar
  • 1/4 cup flour
  • 1 tsp vanilla
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt

Cinnamon Streusel Topping:

  • 1 cup oats
  • 3/4 cup flour
  • 3/4 cup brown sugar
  • 2 tsp cinnamon
  • 1/4 cup cold butter (cubed)

Instructions

  1. To start, lightly grease your cast iron skillet and preheat your oven to 375Β°F.
  2. In medium size bowl, combine ground oats (we blended ours in a Nutribullet until a fine flour formed), flour, brown sugar, cinnamon and salt. Using a pastry cutter, cut in the butter to the flour mixture until it resembles a crumbled texture.
  3. Press the mixture firmly to the bottom of the cast iron skillet and back in the oven for 15 minutes or until the crust is lightly browned. Remove from the oven and allow the crust to cool completely before adding the filling and lower the oven temperature to 350Β°F
  4. In a medium size mixing bowl, combine fresh cranberries, orange juice, orange zest, brown sugar, flour, vanilla, nutmeg, cinnamon, and salt. Set aside for later.
  5. In a small mixing bowl combine flour, brown sugar, cinnamon, oats and cold butter with your hands until a crumble forms.
  6. Pour the cranberry mixture into the oat crust and top with the crumble. Bake for 40-50 minutes or until the cranberries are bubbling.
  7. Serve with a scoop of vanilla bean ice cream and enjoy!
