It’s pretty hard for us to resist any dessert labeled “Red Velvet”. Growing up, our mom was absolutely obsessed with red velvet cake. Every chance she got, she would always choose red velvet cake. Naturally the obsession and love we have for red velvet flavored treats was passed down from her, to us, and we are not one bit mad about it.

We think it’s one of the most delicious flavors of desserts, and know so many other people love it too! That’s why we decided to make these Red Velvet Cheesecake Brownies. Made with a delicious red velvet brownie batter and swirled with decadent cream cheese. 

These are super simple to whip up for a dinner party or make for a holiday party. You and your guests will be obsessed!

What’s in this recipe?

Butter: Butter adds richness and delicious flavor to the brownies, as well as allowing the brownies to rise.

Sugar: Sugar makes these brownies deliciously sweet. You certainly can’t go without it!

Melted Chocolate Chips: Melted Chocolate Chips add a bit more chocolate-y flavor and make these brownies have a delicious fudge texture. 

Cocoa Powder: Cocoa powder is essential to a delicious brownie, and it makes this brownie have a yummy chocolate flavor.

Eggs: Eggs add structure to the brownies and help all the ingredients to blend and stick together.

Red Food Coloring: You want to be very generous in the amount of red food coloring you use in this red velvet cheesecake brownies, because you want that vibrant red color.

Vanilla: Vanilla adds a delicious depth to the brownies and pairs nicely with the chocolate flavor.

Salt: Salt is essential in a dessert this rich and sweet to help offset the richness of the treat.

Flour: Flour is the base of any brownie recipe. We recommend using unbleached all-purpose flour.

White Vinegar: A bit of vinegar is added to this recipe. It may sound weird but the addition of vinegar helps the brownies rise and stabilize. Plus, you can’t even taste it!

Cream Cheese: The addition of cream cheese swirled in the top of these brownies not only looks beautiful, but it elevates the flavor of them as well. It’s almost like your eating a delicious cheese cake dessert.

How to Make the Red Velvet Cream Cheese Brownies

You’ll want to start out by preheating your oven to 350°F. Then, coat the bottom of an 8×8 brownie pan (like this one) with butter and line it parchment paper.

Using a medium mixing bowl, combine the all-purpose flour, coco powder and salt in a bowl. Whisk the ingredients until they are fully combined.

Then, in a stand mixer or in a large mixing bowl, add melted butter and sugar and cream them together until they are combined. Add in the eggs, one at a time and beat the mixture until it appears creamy. 

Next, add in the vanilla, red food coloring, the melted chocolate chips and white vinegar. Once all the wet ingredients are combined, start to add the flour mixture in slowly.

Make the Cream Cheese Swirl

In a small mixing bowl (these are our favorite mixing bowls), whisk together softened cream cheese, one egg and 3 tablespoons of sugar until the mixture is fully combined.

Pour your red velvet brownie batter into the prepared brownie pan and drop 4-5 large spoonfuls of cream cheese mixture on top of the batter. Using a knife, swirl the cream cheese into the red velvet brownie batter.

Bake in the oven for 30-40 minutes (depending on how your oven bakes). To test and see if your brownies are finished baking, insert a toothpick into the center. If it comes out clean, the brownies are ready. If the toothpick does not come out clean, bake the brownies in increments of 3 minutes, testing until the batter is completely baked through.

Let the brownies cool on a wire rack for 10-15 minutes. This will allow the brownies to set and be ready to cut. Enjoy the red velvet cheesecake brownies with a hot cup of coffee or tea after a meal.

Ingredients

  • 1/2 cup butter (melted)
  • 1 cup sugar
  • 1/4 cup chocolate chips (melted)
  • 3 tbsp cocoa powder
  • 2 eggs
  • 1 tbsp red food coloring
  • 1/2 tsp white vinegar
  • 2 tsp vanilla
  • 1/2 tsp salt
  • 3/4 cup all purpose flour

Cream Cheese Swirl

  • 8 oz cream cheese (softened)
  • 1 egg
  • 3 tbsp sugar

Instructions

  1. Preheat oven to 350*F. Butter and line an 8×8 inch pan with parchment paper. 
  2. In a medium bowl, combine flour, cocoa powder, salt to a bowl. Whisk to combine and set aside.
  3. In a separate mixing bowl, Add melted butter and sugar and blend until combined. Add in eggs, one at a time, until blended and beat until it appears foamy. Pour in vanilla, food coloring and melted chocolate chips ( can be melted in a small saucepan over the stove or in the microwave) and white vinegar. 
  4. Add in flour mixture a little at a time to the wet ingredients. Stir until combined. 
  5. In a separate mixing bowl, make your swirl. Whisk together your cream cheese, 1 egg and 3 tbsp sugar until combined. 
  6. Pour the brownie batter in the prepared brownie pan. Drop 4-5 large spoonfuls of cream cheese mixture on top of the batter. Using a knife, swirl the cream cheese into the brownie mixture.
  7. Bake in oven for 30 – 35 minutes, or until a toothpick can be inserted into the center and come out clean. Let it cool for 10-15 minutes. Slice, serve and enjoy!
