How to Make a Pumpkin Butter Grilled Cheese
Grilled cheeses are our number one go to sandwich when we’re wanting something cozy and warm on a cool night. They’re super duper quick and easy!
Step 1. Melt sage butter in skillet.
One of our favorite ways to add flavor to a grilled cheese is to add herbs to butter. It’s super easy to do. Start by melting butter in a skillet on medium-low heat. Toss several sage leaves into the pan and let them simmer and melt with the butter.
The sage is going to give the sandwich a nice flavor. And when you’re ready to serve, you can scoop out a couple leaves to garnish the top.
Step 2. Layer gouda and pumpkin butter.
The best part besides eating the sandwich is, assembling the sandwich! We recommend layering straight in the pan. Start by slicing two even slices of bread. Make sure they aren’t too thick, as it will take longer to cook.
Place one of the slices in the skillet and top with a couple slices of gouda cheese. Spread pumpkin butter on the other slice of bread and place it pumpkin-butter-side-down on top of the cheese.
Step 3. Toast until crispy, golden and melty!
When the bottom slice of bread is nice and golden and crispy, gently flip your sandwich over to cook the other side. It should take about 4-5 minutes on each side.
Once done, top with crispy sage leaves for a garnish, slice and enjoy!

Tips for the Perfect Golden, Crispy Sandwich
- Watch the heat! You want to make sure you aren’t burning your toast, but cooking it slow enough to melt the cheese and keep the bread a golden brown color. The best way to do this is to cook on medium-low until golden brown.
- Choose a cheese that melts easily. A soft, higher fat cheese is going to melt easily – like gouda, cheddar, Swiss, American.
- Grated cheese melts more evenly. If you are using a block of cheese, grate instead of slicing that way you can get a more even melt. If you’re already using sliced cheese, it should be thin enough to melt through evenly.

If you aren’t a fan of gouda, we recommend either smoked cheddar or provolone.
How to Store Pumpkin Butter Grilled Cheese
If you have any leftovers, store in the fridge in an airtight container or sealable plastic bag until you’re ready to reheat and eat. It should be good for up to 2-3 days.

- 2 slices walnut bread
- 2–4 tbsp pumpkin butter
- 2 slices gouda cheese
- Sage leaves
- 2 tbsp butter
Instructions
- Heat skillet over medium heat. Melt butter and toss in sage leaves. Let them simmer for a couple minutes.
- Place one of the bread slices on the hot skillet, butter side down. Add 2-4 slices of gouda cheese. Spread a thin layer of pumpkin butter on the second slice and place it pumpkin-butter-side-down on the sandwich. Gently spread some extra butter on the top piece of bread.
- Flip sandwich when cheese has started to melt and bread has started to brown and get crispy. It should take about 4-5 minutes on each side.
- Cook until other side is golden brown and cheese has melted through. Drizzle with sage butter from the pan. Slice and serve.
