What You’ll Need
- All purpose flour
- Yeast
- Milk
- Sugar
- Salt
- Butter
- Eggs
- Cheddar cheese
- Mozzarella cheese
- Pepperoni slices
- Pizza sauce
- Garlic cloves
- Fresh Thyme
- Oregano

How to make the dough…
Nothing beats this homemade roll dough! It’s soft, fluffy and so delicious! And it’s not that hard to make, it just takes a little bit of time to develop. Here’s what you need to do!
Warm butter milk and sugar.
First, heat the butter, milk, and sugar in a small sauce pan until the ingredients are fully dissolved. Set aside an let it cool down for a few minutes. If the mixture is too hot, it will kill the yeast.
Activate the yeast
While the butter mixture is cooling, add warm water and quick rise yeast to the bowl of a stand mixer. Let the yeast bloom for 4 minutes. Then add the milk mixture, egg and 2 1/2 cups of flour. Using the dough hook attachment mix the ingredients on speed 2 for 3 minutes.

Then, add the rest of the flour, 3/4 cup of flour to the mixture and kneed the dough on speed 2 for 5 more minutes. The dough at this point should be well combined, dense, but still a bit bouncy.
Form a dough ball and rise
Transfer the dough to a greased bowl, cover with a towel and let it rise in a warm place for 1 hour. We recommend the microwave, overtop or even by a windowsill.
Punch and roll!
After the dough has nearly doubled in size, punch the dough to let out the air. Then, place the dough on a floured surface (wither a clean counter or cutting board) and roll out the dough until it’s 1/4 inch thick. Now you’re ready to add your pizza fixings!

Can I use store-bought dough?
Of course! If you’re wanting a quicker alternative for homemade dough, we recommend using a boxed dinner roll mix, like King Author Dinner Roll Mix. Or for something super quick, Pillsbury Croissant Dough.
The texture will not be the same as a the homemade dough, but you’ll still satisfy a pizza craving.

Tips for making Pepperoni Pizza Rolls
- Use quick rising yeast! The yeast granolas are smaller, which means the rise will be quicker.
- Don’t over heat liquids. If your butter milk and sugar get too hot when you are melting them together, make sure that it cools to a temperature lower than 140ºF.
- Customize the rolls to your liking. Like veggies? Add them! A fan of meat lovers? Add different kinds of meat! Just like pizza, you can customize your rolls. Just make sure that you don’t overstuff the rolls because it will be hard to roll and keep together.
- Use a sharp knife to slice. You want to make sure your cuts are clean and don’t smush the pretty spiral rounds together.
- Cook in a muffin tin. The pizza rolls will hold the pretty shape perfectly in a muffin tin. Just make sure you generously grease the muffin tin for easy removal!

How to Store Pizza Rolls
If you are storing leftovers or making ahead, here’s how to store for optimal freshness!
Refrigerate: Store in an airtight container for up to 3 days.
- Reheat chilled pizza rolls in a preheated oven at 350ºF for 5 minutes or until warm. You can also reheat in the microwave for 30-60 seconds until warm. Timing will vary depending on how your microwave cooks. But be careful not to overcook because the bread can become tough.
Freezer: Let the cooked pizza rolls cool completely before freezing. Place in a ziplock bag in a single layer and freeze for up to 3 months.
- Reheat frozen pizza rolls in the oven. Preheat oven to a low temperature, 350ºF. Place on baking sheet and heat for 10-15 minutes until warm.

- 1/3 cup milk
- 2 tbsp sugar
- 1 tsp salt
- 1/4 cup butter
- 1 pkg quick rise yeast
- 1/4 cup warm water
- 1 egg
- 3 1/4 cups flour
Cheddar Pepperoni Filling
- 1 1/2 cups cheddar cheese (shredded)
- 1 cup mozzarella cheese (shredded)
- 2 cups pepperoni, slices
- 1/2 cup pizza sauce
- 2 garlic cloves (minced)
- 2 tsp tbsp thyme leaves, chopped
- 2 tsp oregano leaves, chopped

- Transfer the dough to a greased bowl and let it rise in a warm place (microwave, onto of the stove, or windowsill) for 1 hour.
- After the dough has nearly doubled in size, punch the dough to let out the air. Then, place the dough on a floured surface (either a clean counter or cutting board) and roll out the dough until it’s 1/4 inch thick.
- Spread thin layer of marinara sauce evenly on the surface of the rolled out dough. Sprinkled with cheese, mince garlic, herbs and pepperoni slices across the rolled out dough.
- Roll the dough just like you’re making cinnamon rolls. Start by rolling the long edge in. Roll as tightly as you can and then pinch in the ends of the roll. Then, using a sharp knife, cut the roll in 1 inch pieces.
- Place each one in an individual muffin tin. Cover the rolls and let them rise for another 30 minutes.
- After the 30 minute rise, bake the rolls on 350°F for 20-25 minutes. The tops should be golden brown.
- Allow the rolls to cool for a few minutes, then serve and enjoy!
