Description
This one-pot cherry tomato orzo combines juicy tomatoes, garlic, fresh herbs, Parmesan, and a touch of cream for a cozy, flavorful meal that comes together in about 20 minutes—with only one pot to clean.

- 1 1/2 cups orzo
- 3 tbsp olive oil
- 3 cloves garlic, minced
- 1 large shallot, minced
- 3 tbsp tomato paste
- 2 tsp fresh oregano
- 1 tsp thyme
- 1 1/2 cups cherry tomatoes
- 1/2 cup heavy cream
- 3 cups vegetable broth
- 1/2 cup grated parmesan
- 1/3 cup chopped basil
Instructions
- In a skillet over medium-low heat, sauté minced garlic and shallot in olive oil in skillet until soft. Lower the temperature if you notice the shallot or garlic are burning or cooking too quickly.
- Once soft and fragrant, stir in tomato paste, cherry tomatoes and herbs. As the tomatoes heat up, they will start to split and burst, gently press on them as they get soft to press out the juices.
- Pour in dry orzo and stir around to toast the pasta in the tomato mixture for about 4-5 minutes.
- Pour vegetable broth and heavy cream into the broth. Stir to mix and make sure to scrape the bottom of the pan to remove any orzo that has stuck to the bottom. Cover the pot to simmer for 10 minutes until al dente.
- Stir in parmesan cheese and basil. Serve warm on it’s own or with your favorite protein for a complete meal.
