Hands-down, wings are the most quintessential game day food! You may be shocked at how easy making wings at home can be! 

Unpopular opinion: we aren’t huge fans of barbecue sauce!!! Shocking, we know, but it led us on a journey of creating an alternative wing sauce for game-day. These asian-inspired spiced ginger chicken wings coated in a super savory miso yuzu sauce, sprinkled with sesame seeds and green onions. They are “finger-licking good” and will keep you coming back for more!

These miso yuzu chicken wings are not your normal wings, but they will for sure be just as big of a hit on game day as their barbecue cousins. We love Asain cuisine and wanted to experiment with some popular flavors like miso and yuzu. Miso has a super strong savory flavor that pairs so well with the tart and sweet flavor of the yuzu.

What is miso?

Some of these ingredients are not common in American cuisine, so you may be wondering what they are and what they taste like. The main ingredient in miso paste is fermented soy beans. Typically to make the paste, the soy beans are blended with a mix of salt, koji (fermented grains) and other ingredients to give it flavor. When all these ingredients are combined, it creates an incredible savory flavored paste. 

What is yuzu and does yuzu taste like?

We were just recently introduced to the yuzu fruit and loved the citrusy flavor it had, so we thought it would be a nice addition to the wing sauce. 

Yuzu is a citrus fruit that looks like a small, round lemon, but tastes tart like a grapefruit and an lemon had a baby. The fruit can be hard to find at a local grocery store, so we are using a yuzu soda for the miso yuzu wing sauce.

What can I substitute for Yuzu?

First look at your local grocery store for either this Kimino Yuzu Juice

If you can’t find that specific soda, you can substitute it with one of the following: Lemon Ginger Olipop Soda  or the juice and zest from either a lemon, lime, grapefruit or orange.

Tips for Success:

  • If you want crispy wings, make sure to pat them dry. Once you remove the wings from the packaging, pat them dry with a paper towel to remove any excess moisture. This will help to make the wings crispy while baking. 
  • Use a meat thermometer. We always have a meat thermometer on hand to make sure we are properly cooking meat. Check each wing to make sure they are baked to a temperature of 165°F internal temperature. Some wings vary in size and can take longer to cook.

Miso Yuzu Chicken Wings

Description

Asian-inspired spiced ginger chicken wings coated in a super savory miso yuzu sauce, sprinkled with sesame seeds and green onions. 


Ingredients

Scale

1/2 cup miso paste

1/4 cup soy sauce

2 tbsp honey

1 tbsp rice vinegar

2 tsp sesame oil

1/2 cup yuzu soda (can sub with a ginger lemon olipop soda or just add a bit of lemon zest

2 lbs chicken wings

2 tsp garlic powder

2 tsp ginger powder

1/2 tsp salt

1/2 tsp pepper

2 tbsp baking powder


Instructions

  1. In a small bowl, whisk together miso glaze ingredients. Pour into a skillet and simmer over medium heat for 10 minutes until thickened. 
  2. Preheat oven to 425°F. Remove chicken wings from package and pat dry with paper towel until wings are completely dry. 
  3. In a small bowl, mix salt, garlic powder, ginger, pepper and baking powder. Sprinkle over wings and toss or rub into chicken to coat all pieces evenly.
  4. Lay wings in a single layer on a parchment paper lined baking sheet. Place in the oven and bake for 20-30 minutes until cooked through to 165°F. 
  5. Remove from the oven and let the wings cool for 5 minutes. 
  6. Place the wings in the sauce one by one to evenly coat and place on serving plat. 
  7. Sprinkle with chopped green onions, sesame seeds and lime zest.
