One of our favorite breakfasts that we ate pretty much every week growing up were Eggo mini pancakes. If you were a child of the late 90’s, these were most likely in your freezer growing up too.

Not only are these pancakes just the best, but we think that anything in miniature form tastes better. It doesn’t matter what it is…mini m&ms, mini cookies, or mini muffins, they just  taste better.

What’s in this recipe?

You most likely have all these ingredients in your pantry already, so these mini silver dollar pancakes will be super simple to make!

Flour: The flour is what makes these pancakes light and fluffy!

Sugar: Adding a bit of sweetness to the batter is always a good idea and balances out the salt in the batter as well.

Baking Powder: Baking powder is used to make these mini pancakes rise and be extra fluffy. We prefer our mini pancakes to be fluffy little cakes.

Salt: A little bit of salt will help balance out all the sugary toppings you put on your pancakes.

Cinnamon: We add cinnamon to pretty much any baked good we can. It add such a yummy depth of flavor and is so good for you too.

Almond Milk: Because we don’t drink regular milk, we substituted it with almond milk. It doesn’t take away from the texture or flavor of the pancakes at all. You can use whole milk or 2% milk if that’s what you prefer.

Melted Butter: Butter adds a great rich flavor to the silver dollar pancakes.

Egg: one egg is all this recipe takes!

Vanilla: This is the best secret ingredient we always sneak into our pancakes.

How to Make Mini Silver Dollar Pancakes

Pancakes are super simple to make. You’ll need two mixing bowls, a whisk, a tablespoon for scooping the batter and preheated skillet or griddle.

First, whisk the almond milk, egg, melted butter and vanilla in a bowl until combined.

Then, in a separate bowl, whisk flour, sugar, baking powder, salt and cinnamon until well combined. 

Add your wet ingredients into your dry ingredients and whisk until fully combined. The batter should be smooth and a bit on the thicker side.

Lastly heat a skillet or griddle on medium heat. Use a tablespoon to scoop out the batter onto the skillet to make the mini silver dollar sized pancakes. Flip the pancake once the edge star to cook and little bubbles form. Once they are cooked, remove the pancake from the heat and place them onto a plate.

Tips for Making Mini Pancakes

How do I not burn my mini pancakes?

One of the things we are always most mindful of is burning our pancakes. Making these mini pancakes, we knew we had to be even more cautious because they were so small.

To avoid burning your pancakes, we suggest reducing the heat to medium/low heat. They are tiny pancakes, so it won’t take long for them to cook before you need to flip them over.

How can I store mini silver dollar pancakes?

Just like Eggs mini pancakes, you can put these in a freezer zip lock bag and freeze them. 

To reheat your pancakes, place 4-5 plate and heat for 30-45 seconds.

Ingredients

Units Scale
  • 1 cup flour
  • 1 tbsp sugar
  • 1 1/2 tsp baking powder

  • 1 tsp cinnamon
