If you follow along with us on Instagram, you know that we are obsessed with matcha. We make matcha lattes just about every day. One of our favorite ways to have matcha is in baked goods.

We love putting matcha in cookies, breads and now…cinnamon rolls! 

Even if you don’t like matcha, have been scared to try it, or have never even heard of it, you will love it once you take a bite of these cinnamon rolls.

What is matcha?

Matcha is made from ground green tea leaves. Green tea leaves are ground into a fine green powder, whisked in hot water and ready-to-serve drink. 

What does matcha taste like?

It has a bitter grassy taste, but it pairs so well with baked breads and desserts, sweet lemonade drinks, coconut milk or creamy oat milk.

Don’t let the initial taste of matcha fool you, when baked in sweet treats, the flavor develops more and it becomes irresistible!

Does matcha have caffeine?

Matcha does have caffeine, and actually has more than double the amount of caffeine as green tea. For every 8oz of caffeine, there are nearly 70 mg of caffeine. One benefit of the caffeine from matcha, as opposed to drinking coffee, is that it gives you more energy for longer. With each cup of matcha, it provides you 4-6 hours of energy.

What’s in this matcha cinnamon roll recipe?

Unbleached flour: We love using the highest quality of flour in our baked goods, and we always prefer baking with unbleached flour.

Cinnamon: Cinnamon is swirled in the buttery brown sugar filling–making it so delicious.

Matcha: We added matcha to the filling and the icing on these cinnamon rolls. The matcha flavor bakes into the cinnamon roll giving it a richer flavor.

Powdered sugar glaze: Powdered sugar glaze is a staple on a lot of cinnamon rolls. It’s super easy to make too! We love adding it to cakes, muffins and cinnamon rolls.

What does buttermilk do in cinnamon rolls?

Buttermilk is an amazing addition to your cinnamon roll dough. First, it adds a tang to the cinnamon roll, which pairs great with the sweetness of the filling and the icing.

Secondly, it makes the cinnamon rolls tender and super moist!

If I don’t have buttermilk, what can I do?

Trust us, we’ve been there. A recipe calls for buttermilk and you don’t seem to have it. But really…who keeps buttermilk in their fridge all the time?

Buttermilk is super simple to make at home. All you have to do is add the juice of one lemon and 1 cup of milk (this works with alternative milks too). Let the mixture sit of 3-5 minutes and bam! You have made buttermilk!

Ingredients

Cinnamon Roll Dough

  • 1 pkg dry yeast
  • 1 cup warm water
  • 3/4 cup warm milk
  • 1/2 cup buttermilk
  • 3 tbs sugar
  • 2 tbs softened butter
  • 1 1/4 tsp salt
  • 5 1/2 cups flour

Matcha Cinnamon Roll Filling

  • 1/4 cup melted butter
  • 1 cup brown sugar
  • 2 tsp cinnamon
  • 2 tsp matcha

Matcha Icing

  • 2 cups powdered sugar
  • 2 tbsp melted butter
  • 2 tsp vanilla
  • 4 tsp matcha powder
  • 4 tbs milk


Instructions

Matcha Cinnamon Rolls

  1. In a stand mixer bowl, dissolve yeast in warm water. Once dissolved, add warm milk, warm buttermilk, sugar, melted butter, salt and 4 CUPS of the flour. Beat with dough hook until smooth. Stir in the rest of the flour (1 1/2 cups).
  2. Put dough on a floured surface and knead until smooth and elastic (about 6-8 minutes)
  3. Place dough in greased bowl, cover and let rise for 1 hour. It should double in size.
  4. While dough is rising, make the filling. Combine brown sugar, matcha, and cinnamon and set aside.
  5. Punch dough down and turn it out onto a floured surface. Roll dough into an 8×12 rectangle.
  6. Pour melted butter and spread across the dough. Sprinkle brown sugar mixture evenly across the dough.
  7. Using the long side of the dough, begin to roll the dough up. Pinch the seam to seal. Cut into 12 slices.
  8. Place rolls in a baking pan. Cover and let rise for 30 minutes
  9. Preheat oven to 350. Bake for 22-28 mins.

Matcha Icing

  1. Mix all the ingredients for the icing in a medium size bowl until well combined. 
  2. Pour over the top of warm cinnamon rolls.
  3. ENJOY!
