How to Make Sheet Pan Nachos

Sheet pan nachos are super simple to make! Here’s the step by step instructions for making the Tex Mex Sheet Pan Nachos.

Prep your toppings.

Doing this first, will make assembling the tacos super simple in the end. There are some toppings that you will add before cooking and others you will add after your nachos are cooked. If you are making pico de Gallo and guacamole from scratch, we recommend doing this first and setting them in the fridge to chill.

Make meat mixture.

So much flavor is packed into the meat in these Tex Mex nachos. We made our own taco seasoning, but you can also use store-bought taco seasoning. You will add meat, seasonings and onions in a pan to cook. Once the onions have softened and meat is browned, you can remove from the heat. 

Assemble the nachos!

It’s important to layer your nachos. Start with a base of tortilla chips, then cheese and meat. Repeat this for one or two more layers on top. Honestly, the more layers the better. This way you will get a lot of toppings in each bite. 

Bake nachos.

Bake them until they are crispy on the edges and cheese has melted. This should take about 15 minutes. 

Add extra toppings and enjoy!

Once the hot nachos come out of the oven, top with pico de Gallo, guacamole, jalapeños and cilantro. Enjoy them while they’re hot!

Secrets to making the best sheet pan nachos

  • Use restaurant style tortilla chips. They are thicker and crispier and won’t get super soggy while cooking.
  • Make multiple layers! Layering the nachos is truly a game changer in taste. You will get a little bit of every topping in each bite! 
  • Don’t hold back on the cheese! Nachos are supposed to be cheesy! And trust us, after they cook, you will get crispy bits of cheese and gooey bits of cheese. It’s also going to help hold all the toppings together.

How to reheat Sheet Pan Nachos

They are best hot out of the oven! After they reheat, they won’t be quite the same texture. But, if you do need to reheat before serving or have leftovers, you can reheat in the microwave or oven.

Reheating in Microwave: Best for smaller batches or quickly reheating leftovers. Reheat in 15-20 second intervals until nachos are warm and cheese is melted. The texture may be chewier when reheating in microwave.

Reheating in Oven: Preheat oven to 400ºF and bake on a sheet pan and reheat for 5-10 minutes until cheese is melted and chips are crispy.

Description

Baked layers of crispy tortilla chips, cheddar cheese, spicy meat and topped with fresh pico de gallo and guacamole.


Ingredients

Units Scale
  • 1 bag tortilla chips
  • 1 lb ground beef
  • 1/2 onion, chopped
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp chili powder
  • 2 tbsp cumin
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 cup pico de Gallo (recipe below)
  • 1/4 cup cilantro
  • 2 limes, juiced
  • 2 cups cheddar cheese
  • 1 jalapeño
  • 1 cup guacamole (recipe below)

Pico de Gallo

  • 2 tomatoes
  • 1/2 onion
  • Cilantro
  • Lime juice
  • Salt and pepper, to season

Guacamole

  • 5 avocados
  • 1/2 onion, diced
  • 3 tomatoes, dried and diced
  • 2 limes, juiced (plus zest of 1 lime)
  • 1/2 cup cilantro chopped
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Salt and pepper, to season


Instructions

  1. Preheat oven to 425ºF.
  2. In a skillet over medium high heat, add ground beef, onions and seasonings. Break up meat and stir to evenly cook. Stir meat together until onions are soft and beef is cooked through and brown. Sprinkle lime juice over meat and toss. Remove the meat mixture from the heat.
  3. Assemble the nachos. Line a sheet pan with parchment paper and add a single layer of tortilla chips. Top with half of the meat and half of the cheese. Add another layer of tortilla chips and repeat the layers of cheese and tortilla chips.
  4. Place nachos in the preheated oven and cook for 15 minutes. The nachos are done when the chips are crispy, slightly browned and cheese has melted. Remove from oven.
  5. Top with pico de gallo, sliced jalapeños, lime slices, guacamole and cilantro.

Notes

You can swap meat seasonings for a package of taco seasoning.
