We aren’t trying to reinvent the wheel with these burritos. Each burrito is generously filled with fluffy scrambled eggs, crispy bacon, golden hash browns, avocado slices, and melted cheese. The combination of a complete breakfast wrapped in a handheld wrap. 

These BEACH burritos are perfect for weekend brunch, meal prepping for busy weekday mornings, or for feeding some hungry mouths without overthinking the menu.

How to Make Loaded Breakfast Burritos

Step 1. Prep burrito fillings.

Start by prepping your work station; that way, you can quickly assemble the burritos when they’re fresh and warm. 

Start by preheating your oven to 400ºF for baking the bacon and hash browns. Line a baking sheet with some foil and grab a separate baking sheet for your hash browns.

Next, crack and whisk your eggs in a medium bowl. Have the tortillas, shredded cheese, and avocado close to your work station so you’ll be ready to assemble the burritos.

Step 2. Cook bacon, eggs, and hash browns.

Place strips of bacon on a foil-lined baking sheet and place in the preheated oven for about 30 minutes until cooked and crispy. 

Your hashbrown patties will likely cook at this same temperature, so place 4 hash brown patties on a separate baking sheet and pop those in the oven with the bacon. Let them cook for about 15 minutes.

While the bacon and hash browns are cooking in the oven, heat a skillet on the stovetop to make your scrambled eggs. Turn the temperature to medium heat and melt a generous amount of butter in the pan. 

Once the butter is hot, pour in your whisked eggs and scramble them. Once they’re cooked through, remove from the heat and get ready to fill the burritos. See tips below for scrambling eggs. 

Step 3. Fill and roll burritos. 

Once the bacon, hash browns, and eggs are out of the oven, get ready to fill and roll your burritos. Start by heating your tortillas in the oven for about 10 seconds. Warm tortillas will be more pliable. 

Add the fillings to the center of the burrito – start with eggs and avocado, then cheese and bacon, and lastly top with a hashbrown patty and some more cheese. 

Fold the sides into the center first, and then fold the edge of the burrito closest to you over the top. Roll the burrito tight, folding the ends under as you roll. 

Repeat this rolling process for the other burritos. 

Step 4. Crisp on both sides in a hot skillet. Slice in half and enjoy!

Seal the edges of the burrito by warming the burrito on a hot skillet. It will also help to warm the burritos and continue to melt the cheese on the inside. 

Once the bottom is brown and crispy, flip over and heat the top of the burrito until it is browned and crispy. Remove from heat, slice in half, and enjoy. Our favorite way to enjoy burritos is by dipping them in some salsa.

How to make the perfect scrambled eggs….

Nobody likes burned scrambled eggs! After having our fair share of burned, browned scrambled eggs, we have learned the best tips for making perfectly soft and fluffy scrambled eggs!

  • Make sure the heat isn’t too high. You want to heat the skillet over medium heat, so that when you pour your scrambled eggs into the pan, they don’t burn and stick to the bottom. It’s best to go lower and slower.
  • Don’t be afraid of some butter. Greasing your pan with a bit more butter (we’re talking about 2-3 tbsp) will help prevent sticking to the bottom of the pan. If you are using a non-stick pan, you may be okay with less than 2 tbsp.
  • After you pour the eggs in the pan, don’t touch them for 1-2 minutes. Let the eggs cook underneath before you start to scramble them up. 
  • Push the eggs from the outsides to the center. Instead of swirling the eggs constantly, push them from the outside to the center and let the runny parts of the egg settle and cook before scrambling again. This way, you make larger curds and cook them more evenly.

Can I swap bacon for sausage?

Of course! Our favorite sausage for breakfast burritos is either a chicken sausage or a chorizo pork sausage. If you want a milder taste, stick with a chicken sausage. If you want something that is full of spices, choose chorizo. 

Can I swap hash browns for roasted potatoes?

You can do this as well! Burritos can be as personalized as you like. If you want to swap hash browns for roasted, cubed potatoes, we recommend seasoning them with some salt, pepper, paprika, onion powder, and garlic powder to add some flavor to their

Ingredients

  • 4 large 10-inch tortillas
  • 8 bacon slices, chopped
  • 1 avocado, sliced
  • 4 hashbrown patties
  • 6 eggs
  • 3 tbsp butter
  • 1 cup cheddar cheese, shredded


Instructions

  1. Preheat the oven to 400ºF. Line a baking sheet with foil and lay the bacon strips in a single layer on the pan. Bake for 18-20 minutes until crispy. On a separate sheet pan, arrange 4 hashbrown patties and cook in the oven for about 15 minutes. Transfer the bacon to a paper-towel-lined plate to absorb some of the extra grease.
  2. While the bacon and hashbrowns are cooking, scramble your eggs. Heat a skillet over medium heat. Melt butter and cook scrambled eggs. To prevent burning your eggs, keep the heat at medium or medium-low. It’s better to cook low and slow so that you have soft and fluffy eggs and not dry and burned eggs.
  3. Slice avocados and chop bacon into bits.
  4. Warm tortillas in the microwave for about 10 seconds until just warm.
  5. Fill the center of the burrito with eggs, avocado slices, a hash brown patty, and bacon. Fold in the sides and tightly roll the burrito. Slice in half and enjoy.
