What are dirt bomb muffins? 

Dirt bomb muffins are truly an indulgent breakfast, but are so delicious. They are typically made with a soft, spiced muffin batter and then brushed or dipped in butter before they are rolled in cinnamon sugar to create a cinnamon sugar crust that is actually irresistible.

For these lemon poppyseed dirt bombs, we swapped the spiced batter for a tangy lemon poppyseed batter and rolled them in a lemon sugar coating.

How to make Lemon Poppy Seed Dirt Bomb Muffins, Step by Step

Step 1. Preheat the oven and grease your muffin tin. 

Two things that are essential before we start baking muffins: preheating the oven and greasing the muffin tin.

That way, when you’re done making your batter, your muffin tins are ready to be filled, and the oven is warm enough to pop the muffins in the oven. 

Step 2. Whisk the flour mixture together.

In a large bowl, add flour, baking powder, salt, and poppy seeds. Whisk the dry mixture until all the ingredients are incorporated.

Step 3. Mix wet ingredients.

In a medium-sized bowl, mix eggs, sugar, butter, milk, vanilla, sour cream, lemon zest and lemon juice together. 

These ingredients are going to provide a lot of moisture to the muffins. Sour cream is our favorite addition to muffins and cakes because it gives the muffins a delicious crumb and a bit denser texture. 

Step 4. Combine flour mixture with wet ingredients.

Mix the wet ingredients into the dry mixture. Gently stir until you have blended the dry ingredients into the wet and there aren’t any clumps of flour. 

Tip: Be careful not to overmix the muffins. You want to mix until just blended to avoid a tough muffin.

Step 5. Fill muffin tins and bake!

Using an ice cream scoop or 1/4 measuring cup, scoop batter into a prepared muffin tin. You should be able to fill 10-12 muffin tins with the batter. 

Pop them in the oven and bake on 350ºF for 18-22 minutes. Remove the muffins from the oven and let them cool completely.

Step 6. Coat muffins in lemon sugar coating!

Now to the best part… the lemon sugar coating. The lemon sugar is made with granulated sugar and lemon zest. 

Once the muffins are cooled, brush or dunk each one in melted butter and roll in the lemon sugar to coat the surface of the muffins.

Make sure to let them sit on a wire rack or plate for about 5 minutes to set the coating before enjoying.

Should I use muffin liners for dirt bomb muffins?

We don’t recommend using muffin liners for the dirt bomb muffins because you will be rolling the entire muffin in the lemon sugar coating. 

Just make sure you grease the muffin tins with butter, getting into the corners of each well so that the muffins don’t stick. 

How do you store muffins?

If you do not plan on eating the muffins the same day, they will be good for 3-4 days in an airtight container or ziplock at room temperature.

We don’t recommend freezing these muffins with sugar coating. Because when you reheat the muffins, the coating will dissolve and melt into the muffin and not have the same texture. If you want to freeze the muffins for later use, we recommend coating the muffins after thawing.

Ingredients

  • 2 tsp baking powder
  • 1/4 tsp salt
  • Zest of 1 lemon
  • 2 tbsp poppy seeds
  • 2 eggs

  • 1/2 cup butter, melted

  • 1/2 cup sour cream
  • 1 tsp vanilla
  • 1 tbsp lemon juice

Lemon Sugar Coating

  • 1/2 cup butter, melted
  • 3/4 cup sugar
  • Zest if 1 lemon


Instructions

  1. Preheat oven to 350ºF. Grease muffin tin with butter or cooking spray. Make sure the corners of each well are greased so you can remove the muffins easily. We don’t recommend using muffing liners for this recipe because you will be rolling the entire muffin in cinnamon and sugar after the
  2. In a large bowl, add flour, baking powder, salt and poppy seeds. Whisk the dry mixture until all the ingredients are incorporated.
  3. In a medium-sized bowl, mix eggs, sugar, butter, milk, vanilla, sour cream, lemon zest and lemon juice together.
  4. Mix dry ingredients into the wet mixture until just combined. Using an ice cream scoop or 1/4 measuring cup, scoop batter into a prepared muffin tin. We recommend not adding muffin liners because you will roll the muffins in lemon sugar after they bake.
  5. Bake for 18-22 minutes. Remove the muffins from the oven and let them cool completely.
  6. Melt the butter for the lemon sugar coating in a shallow bowl. In an equally shallow bowl, mix lemon zest and sugar together. Roll the muffin in the melted butter (it’s okay to coat it generously). Immediately roll it in the lemon sugar mixture and place on a wire rack or plate to set for 5 minutes.
