We’re keeping things super easy and using frozen store-bought buffalo chicken strips. They’re drizzled with hot honey sauce before being baked so that they develop a sweet spice glaze on the outside.

After the chicken strips are baked, they are chopped into pieces and tucked into Hawaiian rolls with a couple slices of white cheddar cheese and dill pickles. They are finished with a derby butter glaze that soaks into all the nooks and gives the fluffy rolls a delicious buttery, golden brown finish. 

Once they’re baked, they’re super easy to serve a large group. Just let everyone pull one apart! It’s the perfect casual appetizer for fall game-day parties, tailgating or casual get togethers. They’d even make a great prep-ahead holiday lunch!

How to Make Buffalo Chicken Pull-Apart Sandwiches

Step 1. Bake chicken strips in hot honey glaze.

We’re keeping the slider sandwiches super simple by using frozen buffalo chicken strips but are ‘zhuzhing it up’ a bit with some hot honey sauce. As the chicken bakes in the hot honey sauce, it will get develop a sticky, sweet and spice coating on the outside. This will add some sweet heat to each of the sliders. 

Start by preheating the oven to 425°F for the chicken strips. Line a baking sheet with some parchment paper and lay the frozen chicken strips on the pan. Add a generous drizzle over the top of the chicken strips. 

Cook the sliders according to the package instructions, flipping them over halfway through so that they get crispy on both sides. 

Once the chicken strips come out of the oven, drizzle them with a little extra sauce  and chop the strips into nugget-sized chunks.

Step 2. Make herby butter glaze and assemble sandwiches.

The herby butter glaze that these sandwiches are brushed with adds a savory, golden finish on the top of each of these sandwiches. 

To make the glaze, whisk together melted honey, onion powder, garlic powder and chopped fresh parsley in a small bowl. Set it to the side while you make the sandwiches.

Assemble the sandwiches with a couple pieces of chopped chicken, a couple slices of cheddar cheese and a pickle slice. Line a rimmed sheet pan or baking dish with the sandwiches and brush the tops with the herby butter sauce. 

Step 3. Lower oven temperature to 350°F and bake sliders.

Lower the temperature of the oven to 350°F to bake the sandwiches. Pop the sandwiches in the oven for 35-45 minutes until they are golden brown on top and cheese is melty. 

Let them set for a at least 10 minutes to set before serving!

Tips for Making These Buffalo Chicken Sandwiches

  • Drizzle hot honey on the chicken before and after cooking. As the chicken cooks, the honey will caramelize on the outside and develop a delicious glaze. After they are baking, add an extra drizzle of hot honey sauce for a fresh hit of sweet, spicy flavor.
  • Keep the chicken pieces bite sized. The Hawaiian rolls are small, sandwiches that just take several bites to eat. You want to make sure that you chop the chicken strips into small nugget-sized pieces for so that you can get the perfect balance of cheese, chicken and pickles in each bite.
  • Brush the herb butter over the rolls before baking. Not only does this add a delicious savory flavor to these sandwiches, it gives them that golden brown crust on the top.
  • Pack the sliders close together in the baking dish. This will help the rolls stay soft while the tops get golden brown and crisp.

Nothing quite beats the sharpness of the white cheddar cheese. But pepper jack cheese, mozzarella cheese and provolone are delicious substitutions for cheddar cheese on these sliders. 

Although the buffalo chicken tenders add some heat and delicious flavor to these sandwiches, they will taste just as delicious with normal battered frozen chicken tenders.

Yes! It will still add some sweetness to the sliders without the extra heat. If you wanted to make your own hot honey sauce, you could stir some red pepper flakes into the honey before coating the chicken tenders.

Buffalo sauce and ranch dressing are delicious pairings with these sliders.

Of course! Although the sweet flavor and softness of hawaiian rolls creates a perfect base for these sandwiches, slider buns would make a delicous sandwich too!


Storing Buffalo Chicken Sliders

If you have leftovers, store them in an airtight container in the refrigerator for up to 3-4 days. Reheat them in the oven on a temperature of 350°F or in the microwave until warm.

Ingredients

  • 2 packages Hawaiian rolls
  • 24 oz bag frozen buffalo chicken strips, cooked and chopped
  • 1/4 cup hot honey sauce
  • 8 oz/16 slices of white cheddar cheese
  • 24 oz jar dill pickles chips

Herby Butter Glaze

  • 1/4 cup butter
  • 1/2 tsp onion powder
  • 1 tsp garlic powder
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Preheat oven to 425°F. Place chicken strips on a parchment-lined baking sheet. Drizzle with hot honey sauce. Cook chicken strips according to package instructions. Drizzle with a little extra sauce right after they come out of the oven. Chop the strips into nugget-sized chunks.
  2. Mix together the butter herb glaze. In a small bowl, whisk together melted butter, onion powder, garlic powder, and parsley.
  3. Lower the temperature of the oven to 350°F and assemble sandwiches. Slice the cheddar cheese slices into fourths so that you have cheese slices that fit the hawaiian rolls. Fill each Hawaiian roll with some hot honey chicken, a couple pickle slices, a couple small slices of cheddar cheese.
  4. Butter a baking dish and line the dish with the assembled sandwiches. A 9x 13-inch pan will hold 15 sandwiches.
  5. Brush the top of the sandwiches with the butter herb glaze. Cover the baking dish with foil and bake for 35-45 minutes until golden brown on top. Let the sandwiches set for about 10 minutes before serving. Either serve straight from the pan or pull them apart and serve them on a plate.
