We can not get through the day without some good snacks. Which is why we like to keep a good rotation of healthy snacks on hand throughout the day. This hummus is the kind of dip that’s easy to make and somehow makes everything you pair with it taste better. 

It’s creamy, savory, and packed with bold herby flavor. Made with garbanzo beans, tahini, garlic, olive oil, and a blend of cumin and za’atar seasoning, blended into a smooth spread. If you want to get fancy, serve with freshly chopped Castelvetrano olives, a sprinkle of paprika, an extra dusting of za’atar, and a drizzle of olive oil.

How to Make Homemade Za’atar Hummus

Step 1: Create your mise en place. 

Mise en place refers to setting up your cooking station where everything you need for the recipe is measured and set out in front of you. 

We recommend doing this before you start blending ingredients, so you don’t forget to add anything to your dip.

Step 2. Puree the hummus mixture in a food processor. 

Start by adding olive oil, aquafaba (the juice from the chickpea can), seasonings and lemon juice to the processor. Pulse the mixture a couple of times to blend together. Next, add the garbanzo beans and tahini and blend again. The tahini is going to give the hummus a delicious nutty flavor.

Blend the mixture until it reaches a smooth consistency. 

Tip: If you do not have a food processor, you can use a high-powered blender to puree the hummus.

Step 3: If you’re feeling fancy, plate and decorate the hummus.

If you want to make this hummus a show stopper, top with a drizzle of olive oil, freshly chopped green olives, and a sprinkle of paprika and za’atar.

What is za’atar Seasoning? 

It’s a delicious Middle Eastern seasoning that is a blend of herbs, sumac, and sesame seeds to make a citrusy, herby, and nutty blend. Its flavor depth makes it a yummy seasoning for meats, fish, roasting vegetables, and of course…hummus!

What can I swap za’atar seasoning for?

If you can’t get your hands on some Za’atar seasoning, you can mix together equal parts dried thyme, oregano, sesame seeds, and lemon zest. Although not the exact flavor profile of za’atar, this blend will still give you that herby, nutty and citrusy flavor.

Ingredients

Units Scale
  • 1 can chickpeas, drained
  • 1/2 cup tahini
  • 4 tablespoons lemon juice
  • 3 tbsp olive oil
  • 2 cloves of garlic
  • 1 tsp cumin
  • 1 tsp Za’atar seasoning
  • 23 tablespoons of cold water or aquafaba (liquid from chickpea can)

Toppings (optional):

  • Paprika
  • Parsley
  • Chopped olives
  • Za’atar seasoning


Instructions

  1. Drain 1 can of chickpeas and reserve some of the liquid.
  2. In a food processor or high-powered blender, add aquafaba (you can also use water instead of aquafaba), olive oil, minced garlic, seasonings, lemon juice, and blend.
  3. Add in chickpeas and tahini and blend until smooth.
  4. Spread onto plate and drizzle with olive oil, top with olives, sprinkle of paprika, parsley and some extra za’atar.
