Sometimes I’m just in the mood for a single-serve dessert, and this brownie always hits the spot. This brownie can be made with items you already have in your pantry — Greek yogurt, an egg, your sweetener of choice, cocoa powder, and protein powder. A friend made these sweet potato brownies for everyone to try. At first, I was definitely skeptical about it being made with mashed sweet potato, but these may be the best brownies I’ve ever eaten. They are dense, chocolatey, and you would never know that a vegetable snuck into the ingredient list.
6. Peanut Butter Cup Cottage Cheese Truffles

Pour back into cottage cheese container Stir in crushed cookies and smooth out the top. Optional to add more crushed cookies on top Melt chocolate chips and coconut oil in the microwave for 30 sec, stir, and repeat until smooth Pour chocolate over top of the cottage cheese mixture and spread evenly.
