Pineapple BBQ Chicken with Goat Cheese

Description

This easy pineapple BBQ chicken is a fresh, flavorful grilled chicken recipe made with juicy chicken, sweet caramelized pineapple, and smoky barbecue sauce.


Ingredients

Units Scale
  • 4 chicken breasts, butterfly cut
  • 4 oz goat cheese
  • 1/2 cup chopped pineapple

Pineapple BBQ Marinade

  • 1/2 cup pineapple, chopped
  • 1/4 cup soy sauce
  • 3/4 cup Ketchup
  • 2 tbsp Apple cider vinegar
  • 2 tsp Smoked paprika
  • 2 tsp Dijon mustard
  • 1/3 cup Maple syrup
  • 2 tbsp Worcestershire sauce
  • 1 tsp Onion powder
  • 1 tsp Garlic powder
  • 1/4 tsp Salt
  • 1/4 cup Water


Instructions

  1. Slice chicken breasts butterfly-style to make two pieces of meat. Lay the chicken breast flat on the cutting board and slice it horizontally in the middle of the breast all the way through. Fold the chicken breasts open, and they should resemble a butterfly.
  2. Make Pineapple BBQ Marinade. Add the pineapple to the high-powered blender or food processor. Blend until a smooth sauce forms.
  3. Add the mixture to a plastic bag or an airtight container with the chicken. Marinate the chicken in the fridge for at least 2 hours or overnight, if you have the time.
  4. Preheat the grill for grilling. Once the grill reaches a temperature of 375-400°F, you can add the chicken to the grill. Grill chicken for 5-7 minutes on each side, until caramelized on the outside and the internal temp reaches 165°F. If you don’t have a grill or access to one, you can cook the chicken in a skillet over medium-high heat.
  5. Place the cooked pieces on a serving platter and garnish with chunks of fresh pineapple and crumbles of goat cheese.
