After many years cooking and baking together, we have formulated and perfected some recipes that we hope you enjoy. We have perfected our gluten-free oat flour muffin batter base and love making new flavor combinations to share with you.

When experimenting with flavors, we fell IN LOVE with the flavor combination! You don’t have to be gluten free to enjoy this recipe! We promise you, you won’t even notice these muffins are without gluten.

These muffins are dense and delicious. The fresh blueberries are incredible, and the combination of blueberry and cardamom is one of our favorites. This simple recipe is easy to whip together any morning of the week. Prepare these muffins ahead of time. They are super easy to freeze and reheat when you want a quick breakfast.

What is Cardamom?

Cardamom is not as common in Western dishes. It’s super popular in a lot of middle eastern and Indian cuisine! We use it in savory and sweet dishes.

If we were to best describe the flavor of cardamom, it is a combination of subtle spiciness and warm sweetness. It is very similar to cinnamon but with an extra punch of spice!

What can cardamom be used in?

Cardamom can be baked into sweet bun dough, added to savory dishes, even added in coffee drinks! Although, cardamom can be used in a variety of dishes, our favorite way to use cardamom is in baked goods!

We have spent almost a year perfecting a basic muffin recipe that is ‘fool proof’.

While perfecting this recipe, we would make muffins at least once a week, until we found the perfect combination of ingredients to achieve the right texture. We also wanted to make a recipe that had whole food ingredients and zero refined sugar. After trial and error we created the absolute best gluten-free muffin recipe to make for breakfast!

Rich in spice from the cardamom and a burst of blueberry in each bite! So yummy and best eaten right out of the oven!!

  • Total Time: 35 minutes
  • Yield: 12 muffins 1x

Ingredients

Units Scale
  • 1 1/2 cup gluten-free oats (blended for oat flour)
  • 1/2 cup tapioca flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • pinch salt
  • 1 tsp cinnamon
  • 2 eggs (beaten)
  • 1/4 cup maple syrup
  • 1/4 cup olive oil (extra virgin)
  • 1/3 cup almond milk
  • 1/2 cup fresh blueberries

Cardamom Crumble

  • 2/3 cup almond flour
  • 1/3 cup coconut sugar
  • 2 tsp cardamom (ground)
  • 1/4 cup crushed walnuts
  • 3 tbsp coconut oil (melted)

Instructions

  1. Preheat oven to 350°F. Line muffin tin with liners or grease muffin tin with butter/cooking spray.
  2. In a high powered blender, blend oats until flour consistency is achieved.
  3. In a large bowl, add oat flour, tapioca flour, baking soda, baking powder, salt and cinnamon to a bowl. Whisk together.
  4. In a medium bowl, add eggs, maple syrup, olive oil, and almond milk. Mix until wet ingredients are combined.
  5. Add wet ingredients to large bowl with dry ingredients. Fold wet mixture into dry mixture. Fold until mixture is blended together. You should not see any dry ingredient pieces. Do not over mix.
  6. Add in blueberries to muffin batter and fold into mix. Careful not to burst the berries.
  7. Pour batter into muffin tin. Batter should fill 3/4 of each tin.
  8. Place in oven and cook for 20 minutes.
  9. After cooking, remove from oven to cool for 10 minutes. Serve warm and enjoy!

Making the Cardamom Crumble

  1. Add flour, sugar, spices, finely crushed walnuts, and melted coconut oil to a bowl. Mix with hands to incorporate ingredients until a crumble is formed. Set aside – will be added as topping before baking.
