Overnight oats are simply what they say they are – oats made overnight! They’re a great breakfast or snack option because they’re so simple to make!! All it takes is adding 4 ingredients to a jar, giving it a good shake and placing in the fridge to chill overnight.
We love the taste of oats in any form – baked, cooked warm on a stove and chilled overnight! What we love about overnight oats are the simplicity and versatility. You can change the flavors and add different fruits to fit the season! With fall creeping in, today called for sharing our vegan pumpkin pie overnight oats.

What You need for this Recipe
You just need four ingredients! Of course you can customize more with toppings but thats what so great about overnight oats – the simplicity!!
Oats: We used gluten free steel cut oats for this recipe. Steel cut oats provide a great texture for the overnight oats.
Milk: You can use any milk that you would like, but we prefer using milk alternatives. For this recipe, we used almond milk. Click here for our favorite almond milk!
Pumpkin Butter: Pumpkin butter adds just the right amount of sweetness and pumpkin spice flavor! No additional sweetener is needed with this recipe because the pumpkin butter adds all the right notes of sweet with a hint of spice.
Spices: You can never go wrong with adding some extra pumpkin spice! We added pumpkin spice into the oats before chilling and even sprinkled some on top before eating!
Don’t have canning jars? We like to can our overnight oats because they are the easiest to use and provide a container with a perfect portion size of oats. If you do not have canning jars, you can just use an air-tight, just mix in a bowl and store and chill in sealed container.

Description
Delicious and creamy overnight oats packed with pumpkin spice flavor. Perfect for breakfast any fall morning.
Ingredients
- 1 cup rolled oats
- 2 cup almond milk
- 8 tbsp pumpkin butter
- 1 tsp cinnamon
- 1 tsp pumpkin spice
Toppings
- pepitas
- pecans
- bananas
- spices
Instructions
- In a large bowl, add your oats, almond milk, pumpkin butter, and spices. Mix together until everything is incorporated.
- Pour the mixture evenly into four jars. Give them another nice shake for extra measure.
- Place jars in the fridge and refrigerate overnight.
- In the morning, open a jar, add the toppings you would like and ENJOY!
Notes
Don’t have canning jars? That’s okay, just pour into sealable containers and refrigerate overnight.
