How to Make Fluffernutter Snack Mix, Step By Step

Step 1. Prep a sheet pan with parchment paper. Measure out Snack Mix Mix-ins.

First, line a large sheet pan with parchment paper. 

Grab a large bowl and start measuring out the mix-ins for your fluffer nutter snack mix. The base of fluffer nutter mix is a blend of salty, nutty, and sweet snacks. Use your hands or a couple of spoons to toss the mixture together.

To give the mix that iconic Fluffernutter taste, we added Nutter Butter bites, mini marshmallows, and roasted peanuts. The addition of popforn, chex, and ruffled potato chips adds more saltiness, texture, and body to the mix.

Step 2. Melt white chocolate on the stovetop or in the microwave.

Next, carefully melt white chocolate chips on the stovetop or in the microwave. White chocolate can be a bit more temperamental than dark or milk chocolate, so you will need to watch it carefully to avoid any burning or clumping.

Here’s what to do when melting the chocolate in a double boiler or microwave:
  • Melting chocolate on the stovetop. A double boiler is the best way to get smooth, melted chocolate without it burning. If you don’t have a double boiler, you can melt the chocolate in a small saucepan. If using a double boiler, bring the water to a boil before adding the chocolate chips to the top pan of the double boiler. If using a saucepan, melt the chocolate on low. For both stovetop methods, stir continuously until melted.
  • Melting chocolate in the microwave. If you’re looking for an easy way to melt chocolate that requires less cleanup time, we recommend using the microwave. Heat the chocolate chips and in 30-second intervals, stirring between each heating. Once the chocolate is almost melted, remove it and stir until all of the chocolate is melted. 

Once the white chocolate is just melted, remove from the heat and pour over the snack mix.

Step 3. Coat the snack mix with white chocolate and chill.

Pour the melted white chocolate over the snack mix and use a spoon or rubber spatula to stir and coat the mixture with chocolate. 

Once the mixture is evenly coated, pour the snack mix onto the parchment-lined baking sheet in an even layer. 

Chill the mixture in the fridge for about 15-20 minutes to harden. Once the chocolate is has hardened, break larger chunks into smaller pieces and serve.

Tips for making Fluffernutter Snack Mix

  • Use a pre-popped unseasoned popcorn. We recommend using a pre-popped packaged popcorn for this snack mix. You won’t have to worry about having fewer kernels, and easier to measure and add to the mix.
  • If melting chocolate on the stovetop, stir the chocolate continuously. It’s important to stir the chocolate with each of these methods so that the chocolate melts evenly.
  • If melting chocolate in the microwave, heat in 30-second intervals and stir between each heating. This will be the best way to even out the heating as you melt in the microwave. It will also help to avoid burning or clumping.

The Fluffernutter flavor combination originates from a Fluffernutter sandwich, which is made by slathering peanut butter and marshmallow fluff between two pieces of white bread. It can be a toasted sandwich to melt the marshmallow fluff or eaten on untoasted bread. 

The peanut butter and marshmallow fluff flavor combination has been used to make many different desserts and snacks, like fluffernutter brownies or cookies.  

If you are looking for some easy swaps or want to add additional flavors and textures to the snack mix, here are some of our recommendations:

We do recommend keeping the nutter butter bites, marshmallow, and toasted peanuts for that iconic peanut-marshmallow Fluffernutter flavor.

As mentioned previously, white chocolate can be more temperamental than milk chocolate or dark chocolate. Meaning, it can burn or seize more easily. If you burn chocolate, it’s pretty much unsalvageable. Siezed chocolate, that clumps and gets grainy in texture, can be difficult to revive.  

To avoid burning or seizing, here are some things to keep in mind when you’re melting the chocolate over the stovetop or in the microwave:
  • Make sure the saucepan or bowl you are using is completely dry. Any water in the pan will seize the chocolate. 
  • Stir continuously over the stovetop. If you’re cooking in a double boiler or in a saucepan over the stove, stir consistently. 
  • Melt the chocolate low and slow. Drastic temperature changes can burn the chocolate before it’s melted or cause the chocolate to seize. For a silky smooth chocolate, melt the chocolate slowly at a low temperature.
  • Heat the chocolate in the microwave in 30-minute increments until melted. Stir between each 30-second increment.
  • Remove chocolate from the microwave RIGHT BEFORE it’s completely melted. If there are a couple of chips left that haven’t melted, turn off the heat and continue to stir until the chocolate is smooth. This way, you can avoid overheating the chocolate.
  • Add a bit of oil. If needed, you can always add 1-2 tsp of coconut oil or vegetable oil to the chocolate. Adding fat back into the chocolate as it melts will decrease the risk of burning and seizing. 

Store in an airtight container or sealable plastic bag in the refrigerator for 4-5 days.

  • 2 cups mini marshmallows
  • 1 cup roasted peanuts
  • 1 cup popcorn
  • 1 cup Chex cereal
  • 1 cup ruffled potato chips
  • 1 12 oz bag white chocolate chips


Instructions

  1. Line a rimmed baking sheet with wax paper or parchment paper. Set aside.
  2. Measure out each snack mix mix-in – nutter butter bites, mini marshmallows, roasted peanuts, popcorn, Chex cereal, and potato chips. Add the mix-ins to a large mixing bowl. If you don’t have a bowl large enough, split the mixture into two bowls.
  3. Use a double boiler or saucepan to melt chocolate on the stovetop. Turn the heat to low, pour 1 12-oz bag of white chocolate chips into the saucepan. Stir continuously until just melted. You can also melt chocolate in the microwave. Using a microwave-safe bowl, heat the chocolate in 30-second intervals, stirring between each interval.   4. Pour the melted white chocolate over the snack mix in the bowl. Use a rubber spatula or wooden spoon to gently stir the chocolate into the mixture until it is evenly coated.
  5. Spread the chocolate-coated mix onto the baking sheet. Sprinkle with some extra peanuts, flaky sea salt if desired. Chill the mix in the fridge for 15-20 minutes or freezer for 10-15 minutes until the chocolate is solid. Break apart any large chunks and serve. (See storage tips in the blog post above.)
