Fluffernutter S’mores Bars

What do you do when you’re craving s’mores and fluffernutter cookies? You mash them together to create an irresistible treat —Fluffernutter S’mores Bars.

But for real…Mckenzie and I debated for over a week on what we wanted to create with both of these flavor profiles, so when it came down to making a decision we came up with “evil plan” to combine the two together.

These dessert bars have all the flavor or a s’more — chocolate, marshmallow and Hershey bar — with the iconic flavor of a fluffernutter sandwich — marshmallow fluff and peanut butter. This irresistible treat has a layer or marble chocolate peanut butter cookie, a layer of marshmallow fluff and topped with even more marble chocolate peanut butter cookie, graham cracker, Nutter Butters and Hershey chocolate.

Ingredient Snapshot:

Direction Snapshot:

  1. Preheat oven to 350°F and prep your 9×13 baking dish.
  2. Make the peanut butter and chocolate cookie dough. Marble the dough and roll into several balls.
  3. Place the cookie dough balls into the prepared baking dish, leaving 1/3 of it to put on top. Press the cookie dough into an even layer.
  4. Spread one 7oz. Jar of marshmallow cream over the cookie dough.
  5. Add dollops of the remaining cookie dough on top. Gently press Nutter Butters, graham cracker pieces and Hershey’s chocolate bar pieces on top.
  6. Bake for 30-40 minutes or until the top is golden brown.
  7. Let the bars cool completely before cutting. Share and serve with a hot cup of coffee.

What is fluffernutter?

Fluffernutter originated from the fluffernutter sandwich — also known as the “Liberty Sandwich”. It was created in 1918 by Emma Curtis in Massachusetts, after the invention of marshmallow cream.

A fluffernutter sandwich is a spread of peanut butter and marshmallow cream on two pieces of white bread. 

The peanut butter-marshmallow combination has since morphed into so many different desserts and snacks in the years since.

How to make the perfect, soft cookie bar?

Our secret ingredient to making a cookie bar tender and soft is cornstarch. The addition of the cornstarch creates a softer texture and a finer crumb. *YUM!*

How do you marble cookie dough?

Marbling cookie dough seems like a complex idea, but it’s actually super easy. There’s no true since behind it.

  • Using a small ice cream scoop, take one scoop of the peanut butter cookie dough in your hand and one scoop of the chocolate cookie dough in your hand.
  • Press the two doughs together, pull them apart, mush the pieces back together and roll it into a ball.

Tips for Easy Removable of Dessert Bars
  1. Butter or grease the baking dish.
  2. Place parchment paper inside the grated baking dish.

*Doing both of these things will help you easily remove the bars, just by lifting two sides of the parchment paper.

Description

Ingredients

Chocolate Dough

1/2 cup butter, room temp

1 cup dark brown sugar

1 egg, room temp

1 tsp vanilla

1 cup flour

1/2 cup baking soda

1/2 tsp salt

1 tsp cornstarch

1/4 cup cocoa powder

Peanut Butter Dough

1/2 cup butter, room temp

1/2 cup creamy peanut butter

1 cup light brown sugar

2 tbsp granulated sugar

1 egg, room temp

1 tsp vanilla

1 cup flour

1/2 tsp baking soda

1/2 tsp salt

1 tsp cornstarch

For Layers and Toppings

7 oz jar marshmallow fluff

Nutter butter cookies

Graham crackers

Hershey bar


Instructions

Chocolate Dough

  1. Preheat oven to 350°F. Butter (grease) and line a 9×9 baking dish with parchment paper.
  2. In a small mixing bowl, whisk together flour, cocoa powder, baking soda, cornstarch and salt. Set aside for later.
  3. In a stand mixer bowl or hand mixer, cream butter and dark brown sugar until combined.
  4. Add the egg and vanilla to the butter mixture. Mix until just combined.
  5. Mix in the flour mixture to the wet ingredients. Transfer the dough to plastic wrap and place in the refrigerator to chill while you make the peanut butter dough.

Peanut Butter Dough

  1. In a small mixing bowl, whisk together flour, baking soda, salt and cornstarch. Set aside for later.
  2. In a stand or hand mixer, cream together butter and peanut butter. Mix until combined. Add in sugar and light brown sugar. Mix until combined.
  3. Add egg and vanilla to the butter mixer and mix until just combined.
  4. Mix in the flour mixture into the wet ingredients. Once the dough has just mixed together, it’s time to marble the dough.

Marble the Dough

  1. To make this process easier, divide the dough into quarters. This will help you to work with the dough a bit easier as your marble it.
  2. With one quarter peanut butter dough and one quarter chocolate dough, smush the two together, flatten the dough, pull the dough, place one dough piece back on top of the other and roll it into a ball. Repeat this for the remaining three dough balls.

Assemble and Bake

  1. Add half the cookie dough (2 marbled balls) to the prepared baking dish. Press the dough in an even layer to the bottom of the pan.
  2. Spread marshmallow fluff across the top. *Tip: Lightly grease a spatula to spread the fluff. This won’t make it stick to the spatula.
  3. Add dollops of the remaining dough to the top of the marshmallow fluff. Gently press Nutter Butter cookies, Hershey chocolate pieces and graham cracker pieces on top.
  4. Bake for 25-30 minutes, until the top is lightly browned. You may need some extra time depending on how your oven bakes, so start with 2-3 minute additional intervals at a time. Once baked, remove from oven and transfer to a cooling rack. Let the cookie cool completely and then cut into bars.
  5. Enjoy with for a treat after dinner with a cup of coffee or tea.
