- 3 avocados
- 1 cup steamed edemame (fresh or frozen)
- 1/4 onion (chopped)
- 1 jalepeno (seeded and chopped)
- 2 limes (juiced)
- salt and pepper (to season)
- 1/2 cup cilantro
Instructions
- Start by steaming edamame beans according to the packaging. We steamed our frozen edamame over the stove for about 10 minutes. Remove the beans from the pods
- Add about 2/3 of your edamame, avocados, onion, jalapeño, lime juice, salt, pepper and cilantro to a food processor. Pulse until blended to the consistency you desire. If you do not have a food processor, you can mash the ingredients in a bowl.
- Once blended mix in remaining third of the edamame beans. Scoop in serving bowl and serve with sweet potato chips or salted pita chips.
