 This Edamame Guacamole takes a sophisticated twist on the traditional avocado dip.

We have not been able to stop thinking about this edamame guacamole!  We were inspired by one of our favorite health food restaurant appetizers. If anyone has been to a True Food Kitchen, you know what we are talking about! We wanted to try to make a simple recreation at home. It blends smashed avocado with fresh edamame beans and is lightly flavored with a hint of lime and cilantro to make a yummy light and healthy dip.

Something that seems to always be up for debate is the consistency of guacamole. Should it be smooth or chunky? For us, we like a nice balance in between the two and this Edamame Guacamole has such nice smooth texture with an added crunch from the steamed edamame beans.

You’re going to want to keep this recipe in your back pocket! This recipe is a great testament that you don’t have to change much to a recipe to have a new creation! Who knew that adding beans to a dip would take on a whole new level of sophistication!

What’s in this Recipe:

Avocados: You can’t have guacamole without the star ingredient! We thought three large ripe avocados were the perfect amount for this dish.

Edamame: Freshly steamed edamame adds the perfect amount texture to the guacamole. It may seem like an unexpected mixture but believe us, it is a surprisingly good change to a classic guacamole recipe

Purple Onion: Purple onions add a nice flavor to this dish. Most of the time they seem to be not too strong and are our personal favorite to add in fresh dips like this edamame guacamole.

Jalapeño: We love to add a bit of heat to the guacamole. If you want a more mild taste, add a couple or no seeds at all. If you want to bring on the heat, be a bit less liberal about removing the seeds.

Limes: Fresh squeezed lime juice helps to add a nice fresh flavor to the dip but also helps to keep the guac a nice fresh green color.

Cilantro: Cilantro is one of our favorite herbs to add to dips. It adds the best refreshing flavor to this dip.

Salt and pepper: We like to keep the seasonings light to allow for all the fresh flavors to shine through so we season with salt and pepper to taste.

Edamame Guacamole

Ingredients

  • 3 avocados
  • 1 cup steamed edemame (fresh or frozen)
  • 1/4 onion (chopped)
  • 1 jalepeno (seeded and chopped)
  • 2 limes (juiced)
  • salt and pepper (to season)
  • 1/2 cup cilantro

Instructions

  1. Start by steaming edamame beans according to the packaging. We steamed our frozen edamame over the stove for about 10 minutes. Remove the beans from the pods
  2. Add about 2/3 of your edamame, avocados, onion, jalapeño, lime juice, salt, pepper and cilantro to a food processor. Pulse until blended to the consistency you desire. If you do not have a food processor, you can mash the ingredients in a bowl.
  3. Once blended mix in remaining third of the edamame beans. Scoop in serving bowl and serve with sweet potato chips or salted pita chips.
