The universal love for cosmic brownies is still seems to be strong. But a new wave of the cosmic brownie is becoming popular….the homemade cosmic brownie!
TitTok has reignited the cosmic-brownie-rage. And instead of buying them at the store, people are opting to recreate this nostalgic treat at home! Since we love recreating childhood favorites, we had to recreate our own version. These super fudgy, chewy brownies topped with a rich chocolate ganache and candy coated chocolate sprinkles.
Little Debbie knew what she was doing when she created the Cosmic Brownie, but we have to say homemade cosmic brownies are SO MUCH better! To name a few reasons, the flavor is better, the texture is chewier, the brownies are thicker. And honestly, they’re just more fun to make than grabbing a box off the shelf.

What You’ll Need

- Brownie sugar

What is a cosmic brownie?
If you’re a child of the 90’s or early 2000’s you’re likely very familiar with the little Debbie Cosmic Brownies. And if you weren’t eating one, you wish you were! The flavor and texture combination is what brownie dreams are made of.
Cosmic brownies are known for their super fudge chewy texture, chocolate frosting and iconic rainbow candy sprinkles. A truly irresistible combination!!

How to Make Homemade Cosmic Brownies
Cosmic brownies are very similar to regular fudgy brownies, but with a few tweaks. The texture is slightly fudge and they’re topped with a delicious ganache! Let’s dive into the details!
Make cosmic brownie batter
Start by mixing dry and wet ingredients separately before blending together. In a medium bowl, mix together dry ingredients, which is a blend of flour, cocoa powder, salt and corn starch.
The cornstarch is the key to getting that fudgy, chewy texture in the brownies.
Next, melt butter and chocolate chips in a small saucepan over low heat. You’ll need to continuously stir the mixture when it starts to melt, that way it doesn’t burn. Once melted, pour the chocolate-butter mixture into a bowl.
Whisk in vanilla and sugars first. This will bring the temperature of the butter down a bit. Next Add in eggs and egg yolk, one at a time, until blended
Lastly, gently mix in the four mixture until just combined. There may be some clumps in the batter, but that’s okay. Just make sure there aren’t large clumps of flour left in the batter.
Pour the batter into your a greased and parchment-lined brownie pan or baking dish and spread into an even layer. Bake brownies in the oven for 25-35 minutes until coked through. Let the brownies cool completely before pouring ganache.
Make chocolate ganache
Ganache sounds fancy but it’s super easy to make. All you have to do is melt heavy cream and chocolate in a saucepan over medium heat until the chocolate melts into the heavy cream. The key is to continuously stir the mixture until it is melted and smooth.
You will want to immediately pour the ganache over the brownies to set.
Top with ganache, sprinkles and slice!
Pour ganache on top of the cooled brownies and spread into an even layer.
Don’t forget! It wouldn’t be a cosmic brownie without the iconic chocolate candy coated sprinkles! Make sure to set the ganache for at least an hour before slicing. The longer the ganache set, the firmer it will become.
Slice into 9-12 slices and enjoy!!

Easily remove brownies from the pan with this trick!
No one likes to leave brownie bits stuck to the bottom of the pan. Try this fool-proof method to remove brownies from the pan every, single time!
- Butter brownie pan, making sure to cover the bottoms, corners, and sides.
- Place a piece of parchment paper on the bottom of the pan making sure it is long enough to hang above the batter 1-2 inches. This parchment paper will act like a sling for your brownies.
- After the brownies are baked and cooled. It is important that they are cooled for at least 10-15 minutes before you lift them from the pan. Carefully lift up on both sides of the parchment paper and lift up out of the pan. Place them on a cutting board to slice and serve.

Store cosmic brownies in the refrigerator in an airtight container for up to 5 days.
Tips for making perfect brownies…
- Don’t over mix the batter. You want to mix the batter until just combined. If you over mix the batter it could make the brownies too tough or whip too much air into the batter.
- Grease and line pan with parchment paper. Yes, we recommend both. This is the easiest way to cleanly remove brownies from the pan.Greasing the pan with butter or non-stick spray is going to keep the brownies from sticking. Parchment paper will do the same, but will also act as a sling to remove the brownies from the pan.
- Use real chocolate and cocoa powder! Using dark chocolate chips and cocoa powder makes a super rich chocolate flavor to the brownies and also creates that delicious fudgy texture.
- For cosmic brownies, add some cornstarch. The addition of cornstarch gives them that iconic fudge texture.
- Test doneness with a toothpick or fork. Poke a fork in the center of the brownies. If the fork is removed clean, the brownies are done. If the fork is removed with some brownie batter, place the brownies back in for 3-5 minute increments until done.

Super fudgy brownies topped with a rich chocolate ganache and sprinkled with rainbow candy coated sprinkles.
Ingredients
- 12 Tbsp butter
- 4 oz semi sweet chocolate chips
- 3/4 cup sugar
- 1/4 cup brown sugar
- 1 tsp vanilla
- 2 eggs + 1 yolk
- 1 cup all purpose flour
- 1/4 cup cocoa powder
- 1 tbsp cornstarch
- 1/2 tsp sea salt
- 1/4 cup rainbow candy coated sprinkles
Chocolate Ganache Frosting
- 1 1/2 cup semi sweet chocolate chips
- 1/2 cup heavy cream
Instructions
- Preheat oven to 350°F and prep a 11×9 baking pan by buttering the pan and lining the parchment paper.
- In a medium bowl, mix together flour, cocoa powder, salt and corn starch and set aside.
- In a small saucepan over low heat, melt butter and chocolate chips. Wait until it is just melted to remove from heat.
- Pour melted chocolate mixture into a separate bowl and whisk in vanilla, sugars, eggs and egg yolk, one at a time. Next add in flour mixture and fold into the batter with a spatula until the flour is fully mixed in. Careful not to over mix.
- Pour the batter into pan and spread into an even layer.
- Place in the oven and bake for 25-35 minutes until baked through. Use a toothpick or fork to test the doneness of the brownies. If your toothpick removes clean, the brownies are done. If not finished cooking, place back in the oven for 3-5 more minutes increments.
- Remove from oven and let the brownies cool for 10-15 minutes.
- While brownies are cooling, make the chocolate ganache. melt heavy cream and chocolate in a saucepan over medium heat until the chocolate melts into the heavy cream. The key is to continuously stir the mixture until it is melted and smooth. Immediately pour the ganache over the cooled brownies. And sprinkle with candy coated rainbow sprinkles.
- Let the ganache set for at least 1 hour. The longer the ganache sets, the firmer it will get.
