Description

These Coraline cookies and cream brownies are a nostalgic Halloween dessert inspired by the cult-favorite movie. Fudgy Oreo brownies are topped with blue-and-purple swirled icing, yellow star sprinkles, and spooky decorations for the ultimate Coraline movie night or themed Halloween party.

Ingredients

Units Scale
  • 1 stick butter
  • 6 oz chocolate chips
  • 1 1/2 cups sugar
  • 3 eggs
  • 1/4 cup Dutch cocoa powder
  • 1/2 tsp salt
  • 1/2 cup, 2 tbsp flour
  • 1 cup of chocolate Oreos, chopped
  • 1 can vanilla cream cheese frosting
  • 2–3 drops of Blue and purple food coloring
  • Yellow star sprinkles
  • Galaxy sprinkle mix (or blue and purple assorted sprinkles)

Instructions

  1. Preheat oven to 350°F and prep a 9×9-inch baking pan by buttering the pan and lining it with parchment paper.
  2. In a small saucepan over low heat, melt butter and chocolate chips. Remove the saucepan from the heat when it is just melted.
  3. Remove from heat and whisk in sugar and eggs, one at a time. Pour into a medium bowl and mix in cocoa powder and salt. Next, add in flour and fold into the batter with a spatula until the flour is fully mixed in. Fold in chopped Oreo cookies.
  4. Pour the batter into the pan and spread into an even layer.
  5. Place in the oven and bake for 45-50 minutes, until baked through. Use a toothpick or fork to test the doneness of the brownies. If your toothpick comes out clean, the brownies are done. If not finished cooking, place back in the oven for 3-5 more minute increments.
  6. Remove from the oven and let the brownies cool completely.
  7. Split one jar of vanilla icing evenly into two separate bowls. Add 2-3 drops of blue coloring to one bowl and 2-3 drops of purple (or equal parts red and blue) food coloring to the other bowl. Stir each icing until the color is evenly blended. If you need to add more coloring to get the color you want, add 2-3 additional drops, stir, and see if you need more.
  8. Place random dollops of blue and purple icing over the top of the brownie sheet pan. Use a knife or spatula to swirl the icing together to cover the top of the brownies.
  9. Decorate with yellow star sprinkles and galaxy sprinkles. Slice into bars and enjoy.
