Ladies Who Brunch…this will be your new go-to recipe to make when your girls come over! We’re suckers for simple breakfast foods to serve when we have friends over, and with the temperatures dropping, we’re about to be in our full-time homemade brunch era. 

Hosting and making a meal for others can be a bit overwhelming, but having easy recipes to whip up makes things so much easier. This Cheesy Egg Bacon Croissant Casserole is the PERFECT recipe, and we guarantee it’ll be a crowd pleaser!

Toasted croissants, eggs, sliced bacon, freshly grated cheese and fresh herbs make up this delicious dish. It’ll take you less than 10 minutes to get in the oven, so you can spend more time prepping for your guests.

We’ll tell you exactly how to prepare it (although it doesn’t require much work) and our favorite baking dish for any casserole or bake!

1. Sauté

First things first, you’ll start by sautéing the shallots and garlic. This will make the flavors more fragrant when they actually bake with the other other ingredients.

This is when you’ll want to fry your bacon. You’ll want to cook it before it bakes with the other ingredients as well.

2. Whisk

Now it’s time to whisk all the ingredients (minus the croissants) in a large mixing bowl. Add 12 eggs, milk, cheese, sautéed shallots and garlic, chopped bacon, mustard and seasonings.

3. Pour

Then, pour the egg mixture into your baking dish (we absolutely love this one from Crate & Barrel). Half your croissants and place in the egg mixture—making sure you can see the tops of the croissants.

4. Bake

Finally, it’s time to bake! Cover the Cheesy Egg Bacon Croissant Casserole and bake for 25-30 minutes. Then, remove the foil and back for 10 more minutes. 

PRO TIP: Bake time totally depends on how your oven heats and bakes, so we recommend starting off with 10 minutes (without the foil). If the egg its till runny and not fully cooked, add at least 5 more minutes to the time. You’ll want to cook the egg until it’s all the way cooked through.

Top with freshly chopped parsley and serve your guests with some of your other favorite brunch recipes!

Cheesy Egg Bacon Croissant Casserole. This will be your new favorite casserole for brunch with the girls!


Ingredients

Scale

8 croissants

12 eggs

2 shallots, halved and thinly sliced

3 cloves garlic, minced

1 1/2 cups milk

6 strips Bacon chopped

1 tbsp Dijon mustard

1 cup Gruyère cheese, grated

1/4 cup chopped parsley

2 tbsp chopped thyme


Instructions

  1. Preheat oven to 350°F. sauté shallots, garlic until fragrant over medium heat. Remove from pan and cook bacon. Cook bacon until crispy and rough chop.
  2. In a large bowl whisk eggs. Whisk in milk, Dijon, chopped bacon, shallots and garlic, grated cheese, and thyme.
  3. Pour egg mixture Halve your croissants and place them in your egg mixture, in rows, making sure some of the croissant shows above the egg.
  4. Cove with foil and place in oven to cook for 25-30 minutes. Remove foil and bake for another 5-10 minutes until golden brown or until the egg is cooked all the way through. Top with freshly chopped parsley.
